I love zucchini! I'm sort of hopping on Bella's bandwagon here...but I do love zucchini fritters. Just use a grater to slice thin strips of the zucchinis (think match stick fries). Then wring out any excess water in paper towels. Mix with 1 egg, breadcrumbs and parmesan cheese. Press mixture into mini patties (about 1/4 Cup each) and then fry up in a pan with some olive oil. YUM!

I like to just slice them into rounds and boil them in water with a little salt. Depending what you're serving them with, you can add a little spaghetti sauce.
I slice them into coins, add a tiny bit of olive oil to the pan, quick saute some shallots and then throw the coins in. I let them cook for about 5 min, add some balsamic and turn the heat off. I then cover them with a lid and let them sit for three. I make this all the time.

i like to slice them long-ways and either roast them or grill them, with olive oil, sea salt, and whatever kind of seasonings you like. or, chop them up into cubes and toss them with onion and red potatoes in an olive oil and spice mixture (not too much or it's greasy) and roast it at a high temp for 20-35 minutes (depending)... it's REALLY good that way.
