Gluten Free Anyone (Know it's non wedding related..)

So I just got diagnosed with Celiac Disease and wondered if anyone on here is eating gluten-free? I'm feeling really overwhelmed looking for things to eat as I'm a nurse who works night shift and I'll be giving up my smart ones frozen pasta meals! :(

    I personally think all this is a myth created by doctors.  Nobody was gluten free 2 years ago, you can't even go to the store without seeing everything gluten free.  Good Luck with finding food you can eat, I know I couldn't do it.  I know the cereal aisles are packed with gluten free stuff.

    Ugh, what a pain.  There is a lot of support out there!  I'm glad you have a diagnosis, even if it isn't what you wanted to hear.  Kroger carrys a line of bakery products called Udi's that are pretty good (the cookies remind me of the old McDonalds cookies, if that doesn't date me ;)

    Yea I was very suprised by what kroger has. I didn't see those cookies and I'm def going to look for them because I SO remember those cookies! haha

    My mom found out a few years ago that she had a allergy to some yeasts, so she went on a gluten free diet for a few months. She said it made a huge difference in how she felt. She had less headaches and her stomach/intestines felt significantly better. Also, she lost weight since she had to eat so healthy!

    She ate a lot of fresh vegetables and chicken. A lot of brown rice. If you go to Whole Foods they have a ton of gluten free things. She even found gluten free brownies and bread. Of course, they don't taste the same but it's better than nothing! Good luck with everything and hopefully the new diet makes a difference!

    My mom also has celiacs.  For years she thought she had Krohns, but it turned out to be celiacs.  She said that it is amazing how much better she felt once she started eating gluten free.  She made gluten free pasta one time for me and I thought it tasted fine, I probably wouldn't have even noticed if I wouldn't have known that it was gluten free pasta.  She really never had any issues with switching to gluten free- there are tons of options available.  Even places like Maggiano's have gluten free pasta now and gluten free menus.

    Hi, I don't think this is a myth and I've known friends who've had to eat gluten free for over 10 years, it just wasn't well known until now.  People thought they just had stomach pain, but when you actually read into it, it's a serious thing.

    My future MIL has a gluten allergy and her diet hasn't changed too much.  The main thing is even though restaurants can say their food is "gluten free" it technically isn't unless it's been prepared in a certified kitchen.  This makes sure anything prepared hasn't touched anything with gluten.  Ok, enough with the novel  =)

    I eat a very low carb diet, which is not quite the same as gluten free, however, I will say that the Betty Crocker gluten free brownies are AMAZING!  They are so rich and fudgy..mm..better than regular brownies, in my opinion.  Besides that, I eat a LOT of lean meats and fresh veggies...it really has made a difference in how I feel.

    thanks so much for all your great advice/info! I Just heard there's a celiac awareness thing coming through cincy but I'll be out of town in a wedding (not my own :) ) But yes I agree it's not a myth, and I have to admit even 24 hours into the diet I felt better stomach wise.
