those with special diets..

I have one BM who has to have gluten free meals, and another BM who is a vegetarian.

Does this mean that I have to a complete gluten free menu and also have a vegetarian option, or what? I am 99% sure that this is the only restrictions we will have, so there is no reason in my opinion to have to have a vegetarian option. Right now, we are throwing around the idea of a Mexican station (fajitas, rice, beans, the whole 9 yards) and a slider and fries station. The vegetarian BM eats taco bell all the time, so I think it would be ok as long as we don't have the meat mixed in with everything else. (She isn't strict about it, she just hates the consistency when she bites into it.)

As for the gluten free BM, IDK what to do about that. She is allergic to so many things that it may just be better for me to ask the caterer to prepare a completely different meal for her. Is this a reasonable option or have I lost my mind

Caterers are used to dealing with dietary restrictions, so just ask them what they usually do.

I don't think you'd need to have a completely gluten free, vegetarian menu. There are MANY ways to accomodate the needs you mentioned.

Having a fajita station-or something like that would probably work, both BMs could simply not take the items they're sensitive to. Chinese (most asian cuisines really) and East Indian cuisine is also commonly gluten free and vegetarian.

I'm a vegetarian and a mexican bar is perfect. One of my friends had one at a holiday party last month and I was happy as a clam. Just make sure the caterers don't use lard to make the beans or chicken stock to make the rice. Basically, everything that LOOKS vegetarian should be vegetarian. I eat taco bell when I have to because their beans are vegetarian (though their sour cream is not).

As for gluten, if she has a lot of allergies, ask if she wants a separate plate. If it's mainly the gluten she might be able to have corn tortillas, beans, meat, cheese and salsa. Ask her about those things and talk with your caterer about ingredients.

FSIL and her FI are the only guests we have with diet restriction due to their religion. They are both STRICT vegans. So that they may enjoy dinner with us and feel comfortable and respected, we are ordering their meal separate from a local vegetarian restaurant whose meals are also gluten free. It's such a small, yet extremely important thing to do for them. I can't ask them to nibble on naked salad all evening.

as for gluten/celiac my understanding is that the diet is very strict and they can't have anything that even touches something with wheat - so i would get them their own meal.  the caterer should understand this.  also, def talk to your friend individually to know her specific issues (often gluten goes along with lactose, etc.) and convey that to the caterer.
as for the vegetarian, there may be other guests as well that you don't know about (depending on your party) so i would suggest leaving meat seperate and labeling whereever possible or if there's an attendant there they can ask (for instance if the beans have meat in them or not).  you don't need to have a whole seperate option though if your doing something like the mexican bar (in fact as long as the beans don't have meat that's a great thing for a veg!)
