I read somewhere that a normal "meal" should have 16 oz of food per person and that 1/4 of that should be vegetables. We were thinking for more of a late-night reception (after dinner), but this is what I was thinking for the time being. pp serving sizes based on # of packages I'm looking at buying with 100% attendance.
Meatballs, various sauces. 4-5 per person.
Mini flatbread sandwiches. 3-4 per person.
Jumbo shrimp 3-4 per person.
Cauliflower, broccoli, carrots. 2.67 oz per person.
Sweet red peppers. .89 oz per person.
Sugar snap peas. .89 oz per person
Hawaiian rolls (1 oz each). 4 per person
Artichoke dip. 1.3 oz per person
Red pepper hummus. 1.39 oz per person
That's over 17 oz of food per person. Also add in tortilla chips, ranch dip, and cocktail sauce, plus dessert and I think that should be more than enough food.
All finger foods, with the exception of the meatballs. All less than $4 per person.
I was also thinking about adding in cream puffs and 1" cheesecake squares. For an extra 1.15 pp, that's 3-4 cream puffs and 3-4 cheesecake squares per person (The cheesecake comes in 3 varieties in one package, so I'd like to give everyone the opportunity to try one of each if they want to). Then of course cake.
