Why 2 entrees for dinner buffet?

1. The most complete catering proposal we've received directed us to choose 2 entrees for our dinner buffet. We're addressing all medical and religious dietary restrictions through the ingredients for all the food, so all our guests will be able to eat all the food. Is there a reason to provide 2 entrees in this situation? I feel like an entree choice just slows down and confuses buffets.

2. Another caterer just asked for a deadline to submit a bid. What's a proper amount of time to give a caterer? My initial contact with the caterer already stated the 2 foods we must have, the wine we want, and the ingredients we can't have.

  • It's confusing if not every buffet line has both options. People get in one line, then realize it's the chicken line and they want to switch to the beef line. (Obviously, I would do my very best to make sure my caterer didn't set things up this way.)

    Plated might be more expensive, or might not be an option with this caterer. (I really do like them, but they've got some funny policies.) I've also heard it makes head counts and seating arrangements super-important, and I want as little as possible dependent on information we only gather (from RSVP cards) a few weeks before the wedding.

  • Oh, we'll do multiple lines. We had a potluck at church last night, just 20 people, and we still had problems with some people going around the buffet table to the right, and some people going to the left, and log jams. I can't imagine 100 people not being sure they're in the "right" line or that they'll get their choice of food at the end of their line. Well, I can imagine it, 'cause I've been to events like that, and, yeah, will do my best to make sure my wedding's not one of them - beginning by hiring an experienced caterer.
  • I think our buffet with have both entrees right next to each other (separate pans of course) with labels.  poeple go down either side of the table.  Not confusing at all!  It's nice to have a choice of your entree at a wedding.

    Generally the wait staff at the wedding will herd/direct the guests, tell which table can get up to fix their plate, etc, so that it's not a confusing rush to the table in either directions.  The caterer will make sure it's smooth.

    I'd also check with the caterer that both buffet tables offer both foods so people aren't hopping lines.

  • It would be nice to offer your guests an option to choose their entree.  One choice seems a bit limiting, since you're essentially asking them to get up and plate their own meal.  I would see about a plated option if you plan to only have one entree choice.  It would eliminate your confusion and resolve any potential concern of having only one entree.
