    I substitute the bee for ground chicken.

    B-english muffin with peanut butter
    L-salad with raisins, feta cheese and tomatoes with a low fat rasp walnut dressing
    D-homemade chicken quesadilla with salsa on top
    Snack-banana, string cheese, cheddar peanut butter crackers, orange

    I am down another 3 lbs so I am really trying to eat healthy.

  • breakfast: banana-based smoothie of some sort + coffee with skim milk
    lunch: cup of tomato based soup and a small salad with grilled chicken and low fat dressing
    dinner: whole wheat pasta with veggies and protein

    i actually never snack! i try to eat big enough meals so i don't need to snack during the day. 

    i do, however, eat something sweet almost every night. if i don't, i will crave sweets, and end up doing something more harmful to my diet than if i give in to my cravins. last night i had a small square of homemade fudge and a couple strawberries with cream.

    Got this one off of Pinterest and I've been dying to try it:

    Easy Beer Mac and Cheese

    serves 4-6

    2 1/2 cups uncooked whole wheat elbow noodles

    2 tablespoons butter

    2 tablespoons flour

    8 ounces milk

    8 ounces beer (I used an amber beer – it was what I had on hand)

    8 ounces freshly grated cheddar cheese

    4 ounces freshly grated parmesan cheese

    1/4 teaspoon smoked paprika

    pinch of black pepper

    pinch of nutmeg

    1/2 cup panko bread crumbs

    10 large basil leaves, chopped for garnish

     

    Preheat oven to 375 degrees F.

     

    Prepare water for pasta and boil according to directions, shaving 1-2 minutes off of cooking time since pasta will continue to cook in the oven.

     

    Heat a saucepan over medium high heat and add butter. Once melted and sizzling, whisk in flour to create a roux and cook until bubbly and golden in color, about 2 minutes. Add milk and beer into saucepan whisking constantly, then add cheeses and stir until melted. Turn heat down to medium and continue to stir, cooking for 5-6 minutes while mixture thickens. It will most likely NOT thicken like regular mac and cheese because of the beer, but you want it to thicken a little bit. Stir in pepper, paprika and nutmeg.

     

    Add noodles (once cooked and drained) to a casserole dish, then pour cheese over top, mixing gently to combine. Top with panko bread crumbs and an additional sprinkle of cheese if desired. Bake for 25-30 minutes or until bubbly and golden on top.

     

    Remove from oven and let cool for 5 minutes, then top with fresh basil.

  • Typical weekly menu for Kate:

    B - whole wheat or rye toast with natural peanut butter OR steel cut oatmeal with berries or dried fruit OR Greek yogurt with fruit and cereal (whatever was on sale when I went grocery shopping)

    L - if I don't have leftovers from dinner, I usually have soup, salad, or a sandwich/Amy's organic burrito, and fruit

    D - I like to make dinner in bulk so I have lots of leftovers for lunch and other dinners.  This week I made chicken stiry fry with frozen stir fry veggies in a bottled teriyaki sauce.  I also threw in some sesame oil and ginger for extra flavor.

    My go-to Snacks - cheese, whey protein shake, roasted nuts, peanut butter on fruit or crackers, prunes (seriously haha), popcorn, bowl of cereal with almond milk, jerky, pop chips

  • B: Usually just a coffee on weekdays. Sometimes a little yogurt or croissant, too, if I'm really hungry.

    L: It really varies. Sometimes leftovers, sometimes sushi, sometimes a curry from the place across the street.

    D: FI cooks more than I do. Lately he's been into making stews. If I'm cooking, it often involves pasta.

    Snacks: At work, love me some microwave popcorn. Late night, I go for a bowl of cereal (maybe that's why I never want breakfast...?)

    B: Steel cut oats with nuts and chopped up prunes (BTW I have an awesome method for steel cut oats. Sunday night I put 2 cups water & 2 cups almond milk in a pot, bring to a boil, add 1 cup steel cut oats, turn off heat, cover with lid. It's done in the morning and then I put it in tupperware and FI and I both eat it all week.)

    L: Avocado, sprouts, hummus, and cucumbers on whole wheat sandwich thins. This is my favorite sandwich. 

    D: A skinnytaste.com recipe. And we've been trying to eat more fish lately. I just made this one the other night with jasmine rice http://www.skinnytaste.com/2010/04/broiled-tilapia-with-thai-coconut-curry.html
    OMG if you love Thai food, you must try it. 

    Snacks: Usually just fruit. I'm really into mandarines lately. Carrots/triscuits and hummus is a favorite too.

    this sounds amaznig!! i love tilapia but hate cooking it myself bc my apartment smells fishy for days. did you notice a fishy odor after making this?? i would love to try it!!

    Why didn't I ever think to put almond milk in my oatmeal?  DUH.  I'm obsessed with slow cooker oats.

    Also, how delicious are prunes?  FI makes fun of me all the time for eating them.  I think they're ridiculously good.

  • for the record, i am obsessed with prunes too! my fiance and my family laughs at me for eating them so often but i love them. i like the individual wrapped ones that i can just into my lunch bag :)
