My wedding is May 30th and my RSVP date is April 12th. I have no clue why I made it so earlier, I guess I just didn't know any better and didn't do my research. My invitations are right now ready to go out but I think I'm going to wait until mid-March for sure. Are people going to get their invitations and wonder why the heck they have to respond so early or do they not even look at the date?

You sent STDs, so the date shouldn't be too big of a surprise for most people.
Worse comes to worse, if there is a change of plans and it turns out they can't come, they can always call you and send their regrets.
I'd reprint the response cards asap to fix this. You have a distinct window of opportunity now to do the right thing. Why not do it?
Your guests will probably be pretty irritated having to RSVP for an event that far in advance. Shoot. My wedding is in 3 weeks and some of my guests don't know whether they're going to be able to get off work yet or not.
I would probably reprint them if you can, though.
Even if you send them out with the current date, I wouldn't start following up with any non-responders until 2 weeks or so before the wedding.
