  Icing if you go with a low end bakery like Swiss or Haydels, because their Fondants are cheap and gummy. Go with Fondant with a higher end bakery like Sucre or Zoes. A good Fondant should melt in you mouth not gum up. Also, avoid food coloring in fondant, because it will give it a bitter taste.

  Buttercream all the way!  I just don't think you should have to peel your wedding cake.  I like Cocoa Bean in Hammond and the Royal Cakery in New Orleans.

  Icing all the way.  I also dislike fondant.  If it's the look you're after, check out Ambrosia Bakery in Baton Rouge.  That's who we are using and their cakes are flawless and absolutely delicious!
