Coconut Oil

Okay, okay, I know we have already had the controversial conversation about which oil is the 'best,' but I'm here for something else.

My mom got me some coconut oil for Easter from Trader Joe's.  Since H and I normally eat pretty healthy, I'm not too concerned about the 'controversy,' and want to bake something fun with it, for a splurge for him while I'm away.

What do those of you who use coconut oil do with it?  Do you bake with it and, if so, how? (As in, what does it replace in your cooking, how does it alter the recipe if all, etc.)

    Haha, the conversation was forever ago - just because there is so much research out there that confirms and denies every oil being the best and the worst for you.

    I should have added the disclaimer - I have no actual shredded coconut to include in this, I don't believe.  I do have dark chocolate chips, though, and pretty much everything and anything else.

    Not all coconut oils have an overly coconut flavor...my DH swears by coconut oil now and he is literally using it to replace canola oil, vegetable oil and olive oil in EVERYTHING...so anything that would require those things, he now uses coconut oil. I can't tell the difference, so I'm indifferent about it.

    An example for baking would be, instead of canola oil, replace that with coconut oil. DH has made waffles with coconut oil and they turned out fine.

    Is it refined or unrefined? Refined coconut oil has no coconut flavor; unrefined does. (There's a slight chance I have that backwards, btw)

    From my understanding, it is to be used measure-for-measure like any other oil.  Aaaaand I just realized that you probably bake with eggs and butter instead of oil, lol. #veganproblems

    I also sautee with it, fry with it, clean with it, moisturize with it, exfoliate with it...(enter Forest Gump monologue here).

    If you got a "good quality" coconut oil, it shouldn't be really coconut-y. It should DEFINITELY bake off, either way. 
    I usually use it for things on the stove top like stir fry, throw it in smoothies, I don't normally bake with it, since it's thicker than other oils like hemp and olive. But that doesn't mean you can't! I just don't because it means a little extra effort... and I don't bake that often anymore.

    Ophelia-I would be happy to skip the butter if I don't need it seeing as this is thicker than most oils.

If you want to saute something in butter or bake in butter, go right ahead! As long as you stay away from industrially-extracted vegetable seed oils (ridiculously high in omega 6, which leads to chronic inflammation, including heart disease and other ailments), you're fine. Do not fear the saturated fat because it does NOT cause heart disease.!</div><div>

    haha, I am not opposed to butter in the least, unchat, just want to try something new since it was a present and I love love love working with new ingredients! :)

    Ah gotcha. I did use refined oil for frying stuff coconut oil has a high smoke point so it's great for that but I can't find it anywhere else anymore. I use the unrefined stuff just for baking. But I also have paleo coconut fatigue I'm so sick of it being used in every. Single. Paleo. Recipe. Butter and rendered organic Bacon fat for my highheat cooking, please!

    I live with a coconut monster.  Everything coconut possible is considered a good thing.  I think he'll be sad that this won't really taste like coconut.

    I guess I'll try it in a loaf bread or something this weekend and see what happens.  Those are generally the most forgiving.

    If he loves coconut, look into recipes with coconut milk. That will give a stronger flavour. I have a recipe for a super easy coconut chocolate cream dessert that I can post when I come home. Everyone who's had it loves it and it is soooo healthy and easy to make.

    Oh, now I see where the previous controversy started <img src="http://cdn.cl9.vanillaforums.com/downloaded/ver1.0/content/scripts/tinymce/plugins/emotions/images/smiley-smile.gif" border="0" alt="Smile" title="Smile" /> Really, I'm not trying to start anything, but this is a pretty controversial stance to take.  Do whatever works for you and all, but....some of us just don't agree.

    </div><div>I have no interest in putting any animal by product in my bod. It's quite happy without the stuff. And while saturated fat may not be the cause of heart disease, it's not great for ya.. nor is cholesterol. Luckily, I get next to nothing of those two with a plant-based diet. </div><div>

    Am I the only one that is highly allergic to coconut oil? I hear all this great stuff about it but can't go near it!

    Kaos, a fair number if people on the paleo boards say they're allergic to coconut, especially the oil. It seems pretty common. And ftl I wasn't yelling at Ophelia specifically. : I just get frustrated when people go out of their way to steer clear of butter for alleged health reasons and then consume industrial seed oils, which are so bad for you. As for saturated fat and cholesterol, there has been no causation established between them and disease. Saturated fat is the only fat humans consumed until the 20th century. There is nothing even remotely bad in quality sources of saturated fat and cholesterol. But I digress. Still away, will post recipe tomorrow in separate thread. And apologies for my phone eating up punctuation :

    What? Where are you getting this from? People ate nuts and beans and grains and vegetables well before the 20th century....all of which have mono- and poly- unsaturated fats in them.

    I won't even go in to the 'nothing even remotely bad' comment.

For millenia humans were getting a fair part of their fat from animal sources (the humans living in Europe weren't eating avocadoes for the vast majority of their history, that's for sure). It was eating animals that allowed the human brain to grow as big as it did, which is what allows us to now ponder the ethics of eating same said animals. And all those "healthy" vegetable seed oils (canola, etc.) are a mid-20th-century invention - and nobody should be consuming any sort of oil that is extracted with industrial chemicals and then has to be bleached to make it palatable.</div><div>
