Brunch Buffet Menu - Anything Missing?

This is the menu we are submitting to our caterer as final selections for our reception brunch buffet. We have 6 vegetarians, 4 diabetics, and 1 severe walnut allergy so we’re trying to make sure there’s something for everyone…

What are we missing?

Mini pastries

Scrambled eggs

Bacon / Sausage

French toast

Breakfast potatoes

Omelet station w/the following toppings: ham, onions, peppers, cheddar cheese, feta cheese, spinach, and mushrooms

Fruit salad

Vegetable risotto w/grilled vegetables drizzled with roasted tomato oil

Char-grilled marinated chicken breasts with fresh lime, roasted Bermuda onion, black bean & mango salsa

Carving station – ham

Garden Salad

Baby spinach salad

Champagne bar – mimosas, bellinis, champagne

Coffee and tea station with specialty creamers, flavorings, etc.

Juice bar

dessert bar –ass’t mini cupcakes, ass’t mini cake pops, cheesecakes, pineapple upside-down cakes (groom’s cakes), sugar cookies, brownies, chocolate-covered strawberries

Oh, and there will be 15 kids at the wedding – so there will be cereal available at the kid’s tables

    I don't think you're missing anything, per se. It would be pretty much fine "as is", if this is what you want to go for.

    Here are my first impressions, being kinda critical:

    1. I'm not seeing how the garden salad and baby spinach salad are fitting in.

    Could you offer the grilled veggies from the risotto on the side? Then you wouldn't need the two salads at all. Guests could just grab a serving of grilled veggies.

    2. I think you should definitely have some rolls or crusty bread and butter

    3. I would sub the french toast for pancakes or waffles. Reason being, french toast almost always contains an egg-based batter. If someone isn't into eggs, they're kind of limited on the breakfast station.

  • I think that sounds good.  Will the breakfast potatoes be vegetarian?  A nice touch for vegetarians would be to have a separate pan and spatula at the omelette station for veggie omelettes.  

    I disagree with @itzMs about the french toast.  If someone doesn't eat eggs at all, they won't eat waffles or pancakes either, and my experience with people that just don't like eggs has been that french toast is ok.  I feel like french toast might hold up a bit better in a chafing dish, but I don't really have any idea why.  I do like @itzMs suggestion to have some kind of plain bread, crusty bread with butter and jam sounds good.
  • Thanks for the critique itzMS - here's what I've got:

    1 - the garden salad is for DI's side of the family - they are *very* plain-jane about what veggies they eat...  The spinach salad is because we thought it looked yummy - it has chevre cheese, mandarin oranges, and something else in it that we thought sounded good in a raspberry vinagrette...

    2 - good idea on the rolls or bread - I'll definitely add that in!

    3 - pancakes and waffles are made with eggs too, so not sure about this suggestion.  Do you think we need something else breakfast-y that doesn't contain eggs - like oatmeal or coffee cake?

    @jessicabessica , I guess I didn't make my point clear. I meant to imply that French toast really can't be made well without eggs. Pancake and/or waffle batter can be very easily made without eggs and will taste just as good. Pancakes or waffles are also a lighter option.

    Good thought about the separate utensils for vegetarian omelettes - I'll have to ask the venue about that one...

  • @snippet17 - thanks!  Left a message for our caterer - hopefully the separate utensil thing won't be an issue.

    @sleeper2013 - I would definitely prefer smoked salmon myself, but FIs family is super-picky!  They don't eat fish (and many other things)!  Since most of the menu is geared towards people who like food, I figure I should leave the ham on there just in case it's the only thing they'll eat  :)

  • Thumbs up from this nut-allergic vegetarian!

    One suggestion-since you have quite a few vegetarians coming, I'd ask your caterer to use vegetable stock for the risotto, and then mark it as "vegetarian" on the buffet. I usually assume it is made with chicken broth and therefore a no-go for me, and at a wedding I usually won't pry for details (I save my annoying questions for dealing with the allergy).
  • I would add a hollandaise sauce and/or a gravy. 
  • Thanks for the good suggestions!  FI loves hollandaise - I should definitely add that... And I think bagels/toast are already part of our menu - I probably forgot to write that in my original list.

    @Xstatic3333 - will def remember about the chicken broth and marking things vegetarian  :)

     

     

  • I would also add to make sure that your guest with the severe allergies is at a table that gets to go to the food first, just in case. It's less likely that if there has been any cross contamination when the food is first put out.
  • @AmyS2645 - good point!  It's my mom who has the severe allergies so it won't even be awkward that her table is going first...
