We're doing a taco buffet but we're unsure how to prepare the tortillas. We want to do soft shell wheat and corn tortillas. My plan is to heat them up on a flat top, wrap them in tin foil and then keep them warm in chaffing dish. Will this work? I'm worried they'll get too warm and fall apart or dry out. How long will they last like this for? Is there any difference in how you prepare corn and wheat tortillas? Has anyone done this before? Any tips? We're feeding about 90 people so we need this to work on a large scale. Thanks!
