Biking / Southern France

Hi guys!
Do any of you have any experience doing a biking trip? My fiance and I have heard that there's great biking between Southern France and Northern Spain. You can do a guided tour like this through Backroads Tours, but we're not super excited about having a guided tour. ( I speak French and he speaks Spanish.) However, we are also nervous about figuring out the logistics of biking on our own. Any experience or advice? 
We'd like to spend about 5 days doing bikey stuff, and then another 5 days or so staying put somewhere nice.

    Several of their bike tours are "self-guided" which basically means that they will set you up with the bikes and maps you will need, book your hotels, and move your luggage between the hotels while you bike from place to place.  So the biking is at your own pace and not guided.  i really want to do one of these, and they are well reviewed, but i've never had the time.  i need to get the FI to France at some point!
