Special Recipes

Ladies...I could use some inspiration.  I've been working insane hours for the last few weeks (and about 18-20 hours per day this week) and H has been super supportive and great picking up the home slack.  I'm thinking of making a great, great recipe tonight as I'm actually going to leave work today while the sun is still out.  What are your killer, great recipes you make for your SO (or whoever)?  H doesn't eat beef or pork but, otherwise, I'm all ears.

Ideas?

  • Does he like chicken? I make chicken parmesan for a special meal, BF loves it. If I'm in a hurry, I'll make chicken parmesan casserole.

    Also anything that involves seafood is a nice meal.

    He does like chicken and seafood.  I usually make pretty good dishes but I'm too tired to search for recipes/inspiration on the internet today.

    Can you share your chicken parm recipe?  I know it sounds wierd after no real sleep for a few days but I love cooking and I can't wait to try something new out tonight.

  • Two of my favorites have been from allrecipes.com - Gourmet Mushroom Risotto and Mushroom Chicken Piccata.

    The risotto was time consuming cause you're stirring it constantly but it was worth the effort. A couple other recipes from the same site I thought came out really well:

    Harira - a Moroccan dish

    Borscht - we made it without the pork sausage.

    Slow Cooker Chicken Marrakesh - I got blisters from peeling and chopping the sweet potatoes. Maybe not a good recipe for tonight though since it is a slow cooker recipe.

    I've made some Indian recipes from their site too...but I know your H is Indian and he can tell the real stuff from the not so real so I'm hesitant to recommend them. The ones I've been really happy with are their recipes for red lentil curry, bengali chicken curry with potatoes, and butter chicken (murgh makhani).

    I also looked at my Pinterest. One recipe that I really liked but it was annoying to assemble was Eggplant Involtini. The eggplant also took a lot longer to cook and become pliable than the recipe said...at least for me anyway.

     



  • I'll give you both the chicken parm recipe and chicken parm casserole recipe.

    Chicken parm can be adjusted how you want, some people like strips of chicken, I prefer cutlets, so it's up to you. This is a good base recipe, you can add and subtract what you want.

    4-6 boneless, skinless chicken breasts, cut in half (butterflied) and pounded down to 1/2" thick

    Italian breadcrumbs

    Pecorino Romano cheese

    eggs (I use 4, but if you need to add more it's fine)

    milk (or buttermilk. My ex's grandmother used buttermilk, but I can't tell the difference)

    Vegetable oil

    Tomato sauce (homemade preferred, but a good jar sauce is okay, just don't tell anyone ;))

    Fresh mozzarella cheese

    Season our chicken cutlets with salt and pepper.

    Set up three trays for dipping your chicken. Tray 1: a mixture of italian bread crumbs and cheese. Tray 2: whisk eggs and milk together season with salt and pepper (like you're making scrambled eggs) Tray 3: bread crumbs and cheese.

    Dip your cutlets in bread crumbs, egg mixture and bread crumbs again. In a large skillet, put about 1/4" of vegetable oil (or olive) in it and heat it up. It'll be ready if you put the handle of a wooden spoon in the oil and it sizzles around it. Put your cutlets in two at a time, don't overcrowd the pan. Fry each side until brown on each side. Put on paper towels to drain.

    Preheat your oven to 350. Take a pyrex dish and put a thin layer of sauce on the bottom. Add your fried cutlets and then more sauce on top. Don't drown the chicken in the sauce, just eyeball it. Layer the mozzarella on top and throw in the over for 25 minutes, then throw it in the broiler for a few seconds to brown the cheese.

    Serve with pasta and a lot of red wine!

  • There's a lemon risotto from Smitten Kitchen that's surprisingly idiot-proof and tastes like you spent hours working on it. She's also got another idiot-proof/tastes-amazing recipe for a goat cheese, asparagus, and lemon pasta dish that takes about 20 minutes to make (and tastes just as amazing without lemon rind).

    @lmhollister - the risotto sounds so yummy.  That might be on the menu tonight or at least over the weekend!  H makes all the Indian food in our house and I make every other cuisine.  :)

    @buddysmom80 - That recipe sounds really good and not too complicated, which may be called for due to my sleep deprivation.  I'll keep the canned tomato sauce between you and I.  ;)

    @phira - I've actually made that risotto before.  I think I over did it on the lemon though. Goat cheese, lemon and asparagus are like my three favorite things though so I'll check that recipe out.

    @swazzle - I've never made anything from Skinny Taste before.  Does it really taste ok?  It looks good...I'd never tell H I got it from Skinny Taste though or he'd think he was starving all night.  He usually wants hearty, Pioneer Woman kind of recipes.  :)

  • Mmmmmm if chicken is available, there is a recipe on Nom Nom Paleo called "Damn Fine Chicken" - it's awesome.

    Also - there is a salmon recipe I love on allrecipes called "Grilled Salmon I" - I make that and just still it under the broiler for 10 minutes to get the outside all nice and crackly.

    And on Allrecipes - Chef John's Chicken and Mushrooms - it's super duper simple and one of my favorite recipes ever (I use skinless breasts when making, regardless of what this asks for)

  • Tonight, I'm making tilapia foil packs. 

    Lay a piece of fish on a square of tin foil, drizzle it with olive oil, throw on some minced garlic, salt, pepper, and lemon juice, top with lemon slices, fold the pack up on the sides and center so it's sealed well, toss in the oven on 400 degrees for 15-20 minutes. 

    The fish comes out so moist (god, I hate that word but it's appropriate here) and juicy and it's super easy. 



  • @swazzle- We made almost the exact same thing on Monday and it was soooo good! We put chopped scallions and sliced tomatoes on the tilapia before we put them in the oven but FI loved it! To add a kick we put some Mrs. Dash on them with basil flakes.
  • @Swazzle - My H would love that and "moist" made me laugh out loud (I have the humor of a 12 year old when I'm overtired).  I hate fish (my grandmother who raised me was Danish and we were poor growing up so = nearly expired fish for dinner most nights) but H loves it so I make it for him all the time.  I really, really wish I could get in to fish, though, as it is so healthy for you.  Shellfish I can stand but anything else (even mild fish) makes me want to gag because of the memories associated with it.

    THIS is exactly the recipe that came to mind for me too. I made this after you first recommended it on here for DH and he LOVED it! I haven't made it since...maybe it will be on the menu this weekend. :)

    1) Skinny Taste is the FREAKING BOMB! You really don't realize you're eating 'lite'. The recipes are so tasty, they feel indulgent.

    and:

    2) Those hours sound completely insane, and make me worry for you. Not in the 'I don't think she can handle it' way, but in the mom like way.

  • I love the ST chicken, so yummy. I tweaked it a bit, Instead of pounding flat and rolling it, I made a pocket in the breast and stuffed the filling in there, then I don't bread it or bake it, I just pan roast it. This does cause some of the inside cheesey goodness to melt out onto the pan, but thats ok, b/c once the chicken is cooked, I remove it and then deglaze the pan with tequila and add a squeeze of lime. It makes an awesome cheese sauce to serve with the chicken. 

    now I want to go home and make that...

    Awwww, as to number 2.  I don't have anyone that worries over me anymore with these hours other than H.  :)  Working at a big law firm sucks sometimes.  They pay you well for a reason but the reason can be rough.  Thank you for the concern though.

    As far as dinner it was the risotto mentioned above, some mini potatos I seasoned with some herbs and olive oil in and put in the oven for a while to get crispy and some amazing salmon.

    @swazzle - I was right, my H wants tilapia now....will make that next week.  I might give Skinny Taste a shot after all this praise.

    @buddysmom80 - Chicken Parm next week...I'll let you know if I pull it off without the canned sauce.  :)

    @lmhollister- That Harira is on my list for next week too!
