Does anyone have a favorite recipe for apple butter?

I have a craving for this stuff and I figure if I make a bunch I know my mom will take it as she loves it too.

    Get a crap load of Apples. Peel, core, and chop into pieces as small or as big as you want. Put them in a covered Dutch oven over low heat until they turn to mush. Add cinnamon to taste and sugar if you need it.
