  I love grilling up vegetables as a side dish. It's mine and BF's go to. Although tonight we made stir-fry because grilling is no fun when it's snowing out! I also really enjoy using green peppers in the place of chips with salsa. I just sprinkle them with a little garlic powder at bake them for about 10 minutes on 400.

  So both sound really good.

  @bethsmiles I love making mashed sweet potatoes I cube the sweet potato and roast it with nutmeg and cinnamon and then I mash it in the food processor with coconut milk.  It's so good!

  My mom made me roasted veggies when she was out here that were AMAZING! She basically chopped up red/yellow/green peppers, mushrooms, onions and zucchini (you can use any veggies you like though). Then she tossed them with some coconut oil and any dried herbs you like (she used tarragon and parsley). Put them on a parchment lined baking sheet in a 400 degree oven and stir around every 5-7 minutes or so. They only took maybe 15 minutes to roast.

  She served them in a bowl with a couple dollops of goat cheese on top and they were amazing. We actually had this for lunch...but it would be a great side dish too!
