food issue

3 days and counting... what would you do? I have beef, chicken, pork, seafood and vegetarian dishes on our buffet line. I have a friend that is a strict vegan though (blaming wedding brain, why did I not remember this until all of a sudden at 2am) the vegetarian dishes wont work because they have diary.. what the heck do I do?

  • I should add, he and I discussed this over a month ago. For some reason I decided vegan=vegetarian at the time (I know the difference very well usually) and when he asked if their would be food he could eat I said yes. We are having a salad station but that's a pretty measly offering without something heavier to go with it. 
  • I would contact your caterer immediately and explain the issue. What is the vegetarian option? There might be a chance it could be altered for your vegan friend.

    imagebeen sitting here mulling it over... Everything has cheese of some sort. I've emailed the caterer, and will call if I don't hear back by mid-day as they are usually very good at answering emails. worse case scenario I'll make a dish Friday I know he loves that saves and reheats very very well made with seitan have the caterer plate/serve it and then he can just hit the salad bar and veggie tray. I'm going to go finish breathing into a paper bag and try to sleep again. 
  • I hate to break it to you, but your caterer probably can't serve food that was not prepared in a professional environment for health reasons.

    and technically you are correct. There are other factors at play which may allow this to happen though.

    I think this a good plan. I wouldn't tell him to bring his own food.

  • Could the vegetarian dish (or one of the vegetarian options) be made without cheese?

  • I would contact the caterer and ask if they could make a dish (just one for this specific guest) that was vegan, or if you could change the vegetarian option to a vegan dish. I like the salad bar and veggie tray idea.

    Yeah I would do this.  If for some reason the caterer cannot make up a single dish for this guest, I would ask if you can purchase a vegan dish from another restaurant, store, etc. and have them cook it for this guest for your reception.

    I would not make a homemade dish for this guest and ask the caterer to serve it to this guest- for liability issues your caterer will most likely not be permitted to do so.

  • The venue should be able to help you.   I've dealt with venues all over the country and they always seem to make it work.   Sure they don't want outside foods, but if they are the ones ordering the outside food (aka they approve the vendor) it should not be a problem. I've seem many venues do that for Kosher dishes.  They have a relationship with a Kosher deli for these types of situations. I'm sure they can do that for a vegan.






    What differentiates an average host and a great host is anticipating unexpressed needs and wants of their guests.  Just because the want/need is not expressed, doesn't mean it wouldn't be appreciated.
