silly wedding cake question

FI and I are super board right now and watching this show called "Amazing Wedding Cakes"... it's on the bio channel. Anyway currently they are making a gravity-defying honeycomb/beehive cake that has all these wooden dowels and metal parts in it. Stupid question we are having is, how are these things served to people without them potentially choking on non-edible cake parts? Is there someone from the bakery there to help take it apart when the cake is ready to be served (which sounds like a large added expense)? Is that part of the cake not meant to be eaten (as in it is just for show and there is a separate sheet cake for guests)? So many questions - I know nothing about baking but this is fascinating. We are having a small symbolic cake just for us to cut and instead having a dessert hour type thing with 6 different passed desserts and dessert cordials/mixed drinks (like alcoholic coffee bar, an almond joy martini, etc.) but this makes me understand why people spend so much on cakes....they are soooo much work.

  • My understanding is that it's a little of both -- someone is there to take the non-edible parts of the cake out before it's cut/served to people and they're largely just for show; many of them are baked in advance, then frozen, then defrosted, giving them an extra firmness. Many of the decorations they use are inedible as well, meaning the cakes really are just for show.

    And yes, it's freaking insane (IMHO) to spend that much money on an inedible object that's supposed to be edible.

  • I also don't understand spending a lot on a cake.  Our wedding budget overall is sort of large, mostly as a function of the number of guests + NYC area location.  But the cake was not really on my radar at all as a place to spend money.  It's included in our per-head catering amount, so I'm cool with a basic cake from the caterer.  

    We're having a dessert hour too.  I doubt most people will actually eat the cake.

  • Yea that's so ridiculous. It's a cake people!!! We haven't decided on a cake yet, but I definitely so not want to spend thousands of dollars on a freaking cake lol

  • Often a caterer will cut the cake for an extra cake cutting fee. They usually take the cake in the back, dismantle it and cut it up--it's much more complicated and involved than cutting up a sheet cake, for sure. Our caterer is awesome and doesn't charge a cake cutting fee. If my FSIL didn't still rave about their cake and how delicious it was 11 years later (we're using the same baker), then maybe we'd go a different route for dessert. But as it is, I'm pretty excited for our tasting!
  • It is silly to spend so much on a cake with inedible parts. That is why I like Cake Boss. They have the cool looking cakes but they make almost everything edible.
  • In the interest of full disclosure, I'd spend ridiculous amounts of money on a cake provided the whole cake was edible. But I'm way into dessert.
  • I am totally guilty of spending lots of money on a mostly edible fancy cake.

    But I feel no shame.

  • Another thing is that (this is my insecurity coming through) people can sometimes be really critical of wedding cake, and I want to avoid that coming back to me. I just think there's too many preferences out there for me to please everyone with one cake, so we figured we would go with the dessert hour so that if you like pie, cake pops, cookies, or maybe just a dessert cordial - you're covered, and I would feel better knowing *almost* everyone had an option.

    But yeah the cake this baker made was partly made out of PVC pipe and I could only think about plumbing :-O
  • I spent more money that I would have liked to on our cake. It was beautiful and yummy and that's all that matters.
