Catering questions

FI and I are having a tasting tomorrow with Brasa!  I'm super excited.  I have a list of questions that I want to ask them while we're there, but I was wondering if you ladies had any suggestions for questions that you found particularly helpful or wish you had thought of when you had your tastings.

    Whether they provide linens, dishes, silverware, glassware.  Whether they will cut the cake and serve.    What kind of set-up they do and if they will place out any decorations, etc.

    I have a book at home, that has questions to ask your various vendors.  I'll take a look when I get home & let you know what it says for caterers!  = )

    Make sure that they give you a clear understanding of the cost for servers. Many places will tell you the cost per plate up front, but that doesn't include the fee for servers, which changes depending on if it is a plated meal or buffet. They can get expensive really quickly, so don't let them just tack that on without you knowing. Also be sure to find out if there are extra chef fees, coordinator fees, etc.

    Ok here are some questions from the book I mentioned above...

    - How far in advance is food prepared?
    - What are the best menu combinations?
    - Is there anything we need to take in to consideration, given our wedding date & location?  Any foods we should avoid?
    - Are you working any other weddings the same weekend, day or time as mine?
    - Do you handle the setting of all tables?  Will you put out my place cards & favors?
    - If we bring in an outside baker, will you charge a cake cutting fee?
    - Is there a corkage fee if we provide our own alcohol?  How & when should we get the alcohol to you?
    - While tasting - do we like the balance of food on the plate?  Is there too much meat or potatoes?
    - Do we like the flavor?  Is it to overpowering or to bland?
    - Do we like the dishes & tableware choices, or will we want to order our own?
