Pans

FSIL just called mad as heck that her Calphalon non stick pans that she got 3 years ago for her wedding are terrible. Apparently the stuff peels off and ruins the food...ruined fancy dinner she was making for her DH tonight. ALL of my pans are Calphalon non-stick. Does anyone have experience w/ these? What is a good material for the pans? I truly have no clue...

    Calphalon are my fave pans in the world!!!!!!  I have a bunch, my mom has a full set she got from when she was married 30+ yrs ago that are still in great condition and work well!  I have never had any problem.  If she put them in the dishwasher that could have affected the non-stick surface.  All calphalon pans (except the simply calphalon) have a lifetime warranty.  The simply calphalon are 15 yrs I think.  Just send them back and they will replace them or recoat them in non-stick.  You are not supposed to put the non-stick ones in the dishwasher, use pam or any other non-stick spray on them or use metal utensils.  She may have just gotten a defective pan, but they will replace it.  You shouldn't worry, Calphalon is my favorite brand!!!!!!!!

    Materials can be a matter of taste. I prefer the hard anodized aluminum because it heats very evenly and you don't have to turn the heating element up as high to get the same results as stainless steel or cheapo pans. (If you get tri-ply stainless, though, it's fairly even heating.) I dislike non-stick coatings in general because they release unhealthy fumes when you cook with them, and they're easy to damage (using metal utensils, putting them in the dishwasher, etc.). Most anodized cookware is sort of non-stick without the coating. If you get non-stick coated pans, look for ones that are PFOA free. Pick up the pans and feel their weight - generally the heavier they are, the better.

    We registered for the Emeril anodized cookware set. It's about $100 less than the Calphalon set, and it comes with more pieces. It's slightly lighter than the Calphalon, but I don't think it's enough of a difference to be worth paying that much more for less stuff.

    That said, I think MLH is right that this example is probably out of the ordinary. Either it was a defective pan, or your FSIL is using them incorrectly.
