Late night snacks

Those of you that opted to do a snack later in the evening at your wedding... what did you serve? Just curious to see what others have done!

My fiance's family runs a very successful business at the MN State Fair selling deep fried alligator, so we were thrilled when our venue said we could bring in gator and hush puppies for our guests later in the evening. My mom thinks this is super bizarre but it's a big part of FI's life and we know not many guests have been exposed to gator nuggets and gator sausage so we are going with it! Plus I love hush puppies.

  • That sounds awesome!  We aren't doing late night snacks the day of, but we are probably having a pizza party for a welcome party the night before.

    This sounds awesome!  And ya know, I'm kinda with your mom.....the gator is a little......different, but that's ok!  It's not like you're serving this for your main entree.  No one will go hungry if they don't like or want to try the gator.  Besides, there will be hush puppies!  :D
  • I would eat that in a heartbeat!!!

    Best late night snacks I've ever had at a wedding were tacos. Delicious, individually wrapped tacos. But then again I've never had gator and pups as a late night snack at a wedding so.... :)

  • Thanks ladies!! Yeah we definitely realize it's a little out there, but it's a snack option after a full meal and cake so if people choose not to try it they certainly won't go hungry! Alligator is really delicious, especially in sausage form. I hope those that are hesitant will step out of their comfort zone and at least give it a try! We originally wanted to do a s'mores bar but they won't allow open flames, and what's a s'more without a legit roasted marshmallow?!

    We had mini quesodillias and mini cheesesteaks. 

    I would TOTALLY try deep fried gator. Especially if I'm drunk.

    I think it's a great way to incorporate an "unusual" food item since you will have already properly hosted a meal for everyone. I'd love it, personally. And I like that it is very "you".

  • We are looking to do potato skins and mini meatballs or something.  One of the options was chicken wings and I put the brakes on that right away.  I do not want wing sauce on my dress.

    I would totally eat deep fried alligator!  So jealous that I can't :(

    That sounds SO AWESOME.  Basically anything fried late in the evening would be awesome for me, but this is so different and cool!  

    At our wedding we did a popcorn bar late in the evening (I LOVE popcorn and bars that serve it for free :)) and had candies, different flavorings, etc.

  • This sounds pretty cool! I'd never think to try gator but drunk and hungry at a wedding? Yes please!

    I'd love to have some greasy deep fried tacos jack in the box style as a late night snack for my wedding lol.

    Alligator is such a cool idea, I would absolutely try that!

    We are planning on having poutine and I really want to do some sort of milkshake/float bar, something along the lines of a 50's soda shop. We'll see!

  • While it sounds awesome - I'm going to play a little devil's advocate here... Do you REALLY want your IL's to have to work on your wedding night instead of enjoying themselves? While I LOVE the idea - I'm also conflicted because that's asking a lot of them to get all dressed up, then mid-way through the evening when they could be catching up with people they don't get to see often to stop, likely switch clothes, and get things set up, make the gator, then clean up the mess... Really think about that aspect before the final "it's a go" - because you don't want them looking back on the day as one they had to "work" at...

  • @mesmrewe Noooo our venue's chef will cook/serve everything! We are just providing the product because they have a close relationship with their distributors. I wouldn't dream of having any guest in charge of cooking! Don't worry lol :)

    In that case - any rec's on where to get it when it's NOT MN State Fair season?  We rarely get to the State Fair...

    I was just there all weekend. I fly in from Vegas - my FI's family owns Bayou Bob's Gator Shack!! :) I love it! They only get the gator from their distributor specifically for the fair. So I couldn't tell you anywhere else to get it. Sorry!

  • I've never had it (Last time I was at the MN State Fair was for the KISS concert) - it's one of those foods that the first time I'd rather have it prepared by a professional than try to wing it on my own...

  • We had a wood-fired pizza oven set up outside at the end of the night and the pizza was cooked right there.  Tons of different toppings, and take-home boxes for those leaving (or plates for those staying!!)

    I've never had gator before but I would SO try it at a wedding, especially as a late night snack! And mmmmmm hush puppies!

    We have a few options but I think we will end up choosing the mini milkshakes and french fries to be butlered to the bar and dance floor.

  • Our venue is being obnoxious about the gator situation - they want to make the most money they can and we aren't playing the game. So we are thinking of doing a modified s'mores bar... They don't allow open flames, so it would basically be chocolate fondue.... Dipping different kinds of marshmallows in white and milk chocolate, then rolling the marshmallows in toppings like nuts, graham cracker crumbs, crushed cookies, sprinkles, etc. and toasted graham crackers/marshmallow fluff sandwiches dipped the same way. We are disappointed we can't toast marshmallows but we think it still sounds yummy!

    Let me say - I'm peeved for you!!!  I'd say the heck with it then and just order extra cake or desserts for guests to snack on later in the evening...  That way your venue doesn't make out on the deal...  AND I would buy the take-home containers from Sam's for those extra servings so they can't hit you for a "plating" fee..

  • We want to sliders and fries for our late snack to take on the ride home. Our venue said they would do them for us.

  • We're doing pizza! My mom is getting pizza and pop that's only sold in my hometown! So everyone in Milwaukee will get a little St. Louis flare!
