Recipe Help--Hummus crusted chicken

Ok, I have chicken. I have hummus. I have a horrible memory. @JCBride2015, was it you who posted about hummus crusted chicken? If so, do you mind refreshing my memory for how long I am supposed to cook it in the oven for?

 

I am also making a roasted butternut squash puree and garden fresh sauteed green beans and cherry tomatoes. So looking forward to dinner tonight.

 

P.S. I am not telling FI that it is hummus. I will make a hummus-lover out of him yet!

  • So, I saved this in my drafts....no idea if it was JCBride or someone else entirely.




    ETA: realized I should share what I did in case anybody wasn't around for the original thread.  I used Alton Brown's Hummus for Real recipe, with a little less water and a little more garlic.  I spread out some green beans in the bottom of a glass dish, then layered TJ's frozen chicken breast tenderloins in a single layer over that, then spread a little hummus on each chicken breast.  Baked at 350 for just over 30 minutes.  Chicken is juicy, hummus is crusty, beans are crispy.  YUM.

  • It was definitely JC. Go easy with the hummus! I put far too much and it didn't get crispy, so it wasn't as good, I'm guessing.

    I could kiss you @Time2strtliving! I am pounding some chicken breasts really thin, so I would assume they would be like tenderloins. Think the 30 minutes would be enough?

     

    @RebeccaFlower, how much hummus was too much? I was thinking maybe a teaspoon per breast?

    I honestly have no idea.  lol.  My whole post was a copy and paste from the last chicken and hummus conversation.  If the breasts are really thin I might check them earlier than 30 minutes though.

  • Boneless should definitely be done in 30 minutes. Maybe bump the heat up too, I normally cook mine at like 400 for 20 min.

  • Do you have a meat thermometer? It was like $5 and I use it almost every night. It's awesome to stick it in and not have to cut the meat open to check.

  • Hummus-Crusted Chicken

    Prep Time: 10 minutes

    Cook Time: 25 minutes

    Total Time: 35 minutes

    Yield: 4 Servings

    Ingredients

    • 4 boneless, skinless chicken breasts
    • salt and pepper
    • 1 zucchini, chopped
    • 1 yellow squash, chopped
    • 1 medium onion, chopped
    • 1 cup hummus, homemade or storebought
    • 1 Tbsp. olive oil
    • 2 lemons
    • 1 tsp. smoked paprika or sumac

    Method

    Preheat oven to 450 degrees. Prepare one large baking dish or two smaller baking dishes with cooking spray.

    Pat the chicken dry. Season the chicken breasts with generous pinches of salt and pepper. In a large bowl, toss the zucchini, squash and onion with olive oil until evenly coated. Season with salt and pepper.

    If using one baking dish, place all of the vegetables on the bottom of the dish in an even layer. Lay the four chicken breasts evenly on top, then cover each chicken breast with the hummus so that the entire breast is covered. Squeeze the juice of one lemon over the chicken and vegetables. Then sprinkle the pan with smoked paprika or sumac. Thinly slice the remaining lemon, and place the slices in between the chicken and vegetables if desired.

    **If using two pans, use one for the chicken and one for the vegetables.**

    Bake for about 25-30 minutes, until the chicken is cooked through and the vegetables are tender. Serve immediately.

  • Weird! I am inside your brain! I JUST googled the recipe lolo shared because I have a shit ton of hummus that I want to use up this week. Sounds amazing!
  • Thanks @Time2StrtLiving!  I just got home from work and I figure most people are done with dinner by now.  :)

    The time and temperature I used were on the back of the TJ's chicken package, so another recipe is probably best if you're using thawed chicken.  I think the longer time and lower temp are specifically so the frozen chicken cooks evenly.

  • I made the mistake of telling H that I was smearing hummus on mine. He refused to even try it. 

    I also must have made it too thick - not crispy. But it was good all thick and creamy too. The chicken was super juicy.

  • @ShesSoCold--mine wasn't crispy at first either. It was actually kinda mushy and not very appealing. I just popped it under the broiler on high for 5 minutes and it crisped right up.
