Vegetarian Dishes?

So I just got invited to a party and they are trying to keep the food mostly vegetarian.  Anyone have any ideas/recipes for an app or side dish I could make to bring?  I'm debating just doing dessert, I don't know many vegetarian dishes.  Oh and also although the invite said trying to keep it mostly vegatarian I do know the guest of honor eats fish so I'm assuming those would be ok too.  Thanks for any help.

  • Definitely check Pinterest and you'll find tons of ideas. 

    Last week I made a chickpea & tomato salad for a food day at work, which would be a good side dish for something. You just mix together in a big bowl a can of chickpeas, a pint of cherry tomatoes sliced in half, a handful or two of torn basil leaves, and some olive oil. I season mine with whatever I'm feeling at the time, and sprinkle a little bit of balsamic vinegar in there as well. 

    You can also easily make shepherd's pie vegetarian, though it's less of a side dish. I sautee mushrooms and onions in marmite, which gives it a more savory / meaty flavor. Dump those in a pie crust, mix in whatever veggies you like (I use corn, peas, and kidney beans), top with mashed potatoes and shredded cheddar, then bake until the cheese is browned in spots and bubbly.

  • Aren't most side dishes vegetarian? I do get that when there's ONE THING you want to avoid it's easy to only think of that one thing though.

    Here are some of my favorite meatless appetizers:
    Pretzel Bites (add baking soda to the boiling water. I just salt them, and serve with a cinnamon cream cheese frosting sort of dip)

    And a yummy fall side dish, Butternut Squash Gratin

    to follow up on lolo's comment, you can buy auntie anne's boxed pretzel kits at walmart for like $5 if you don't want to gather pretzel-making ingredients yourself.
    All it takes to make pretzels is frozen dinner roll dough, baking soda, and whatever you want to top them with (salt, sugar, parmesan cheese). They're way better than the boxed ones.

    I'm a vegetarian, and I've learned that it's really easy to go meatless. Check out the brand Tofurky for some great meat alternatives. You can find it in refrigerated sections of the grocery store.

    Other good options:
    You could do some hummus and crackers, a great pasta dish (super simple or more complicated if you feel ambitious), pizza, or make a great dip using vegetarian refried beans.
  • Mashed potatoes, green beans, broccoli, sweet potatoes. Most side dishes would work. Or you could do chips and salsa. Or seven layer dip.

    Just make sure if you make seven layer dip (yum!) to use vegetarian refried beans. The other kind uses animal lard.

  • Thank you everyone for all the suggestions.  Yea I guess most side dishes are vegetarian, I don't really know what the "main" dish is going to be, or if there even will be one or if it will more be made up of a bunch of diff dishes people make so I guess I was kind of thinking of that.  I was talking to my mom about what I should bring(its a family members 40th bday party) and she said my aunt would be sending an email list about it tomorrow.  Which totally confused me since the invite email went out today and I haven't even said if I was going yet but ok, so maybe I am going to be voluntold what I am bringing.  I am currently leaning towards jalapeño popper dip though.  I would have gone with bruschetta but that is one of the hosts go to things.

  • I have a recipe for chick pea curry in coconut milk and it's sooooo good. You can also make variations, add potatoes/carrots/spinach in it and its a full meal with brown rice or naan. I also make this pasta bake with pumpkin and fall veggies and you can alternate that with a cream of mushroom and mushrooms.

  • Are you ready for this? It's one of the easiest and most delicious vegetarian dishes ever. 

    Saute onions (and any other veggies you want --- I'd sugges squash & zucchini) with some salt and pepper to taste & lots of curry powder. Add a 32 oz. can of stewed tomatoes and two 15 oz. cans of drained & rinsed chick peas. Let it simmer for an hour and serve topped with a drizzle of olive oil.

  • So as it turns out I have been assigned to make dessert so I'm thinking mini cheesecakes.  Thank you everyone for all the suggestions though.
