Hello ladies,

I'm curious about your favourite fall baking recipes! I haven't baked much this season (with the exception of pumpkin bread and cream cheese icing, yuuuum), so I'm looking to get inspired!

Here's my go-to fall/winter baking dish. Pumpkin Bread Pudding:

1lb brioche, cut into 1-inch pieces (about 12 cups)

3/4 cup dried cranberries (these are optional. I don't use them)

4 large eggs, lightly beaten

1 cup pure pumpkin puree (I usually use the whole can...because you can never have too much pumpkin)

2 cups whole milk

4 Tbsp unsalted butter, melted

1 cup sugar

1/4 cup dark rum

1 tsp pure vanilla extract

2 tsp ground cinnamon, plus extra for sprinkling

1 pint mascarpone cheese, lightly whipped (I don't use this)

Preheat oven to 350. Spread brioche on large rimmed baking sheet and toast for 10-12 minutes or until lightly golden. In a large mixing bowl, combine all ingredients except for bread, mascarpone, and extra cinnamon. Once ingredients are blended, add brioche and stir. Let sit approximately 30 minutes, stirring occasionally, until the bread soaks up most of the liquid. Pour into a large casserole dish (7x11 or so) and bake for 30 minutes.

Last year I made one of these two eggnog bread recipes (can't remember which one) and it was WONDERFUL. I added vanilla pudding mix like the reviews said. It was SO FUCKING GOOD.

This is my go-to fall recipe. I make it probably once a week, one every 2 weeks for DH. He absolutely loves it and its super easy!

I make pumpkin granola, and I love it! I've gotten compliments from friends and, more importantly, super picky FI loves it. It also has the added bonus of making the house smell wonderful. This isn't really a baking item, but, homemade chex mix is my favorite fall time snack. The recipe is on the chex cereal box. It's so much better than store bought.. and makes a ton!
