Food Question

We have a game night tomorrow night with a couple we really like.  They have cooked for us, so we told them we'd bring a lasagna or something and cook it there.

It hadn't occurred to me, but the wife is now a proud owner of a college degree.  So, I'd like to make it a little more special.

So, I'm pulling out the butternut squash w/carmelized onions and walnut recipe that was super yummy and is fancy.  My question is:  when we made it, we really enjoyed the flavor, but did feel like it needed some meat and that the sweet of the butternut squash needed to be cut through a bit.  I've been leaning toward chorizo.  Thoughts, suggestions?

DH will make his french bread tonight and we'll have salad fixings.  Other suggestions?

Salted chocolate tart for dessert.  And hot chocolate drinks for fun.

  • I'd do chorizo but I'd keep it a bit more mild just in case they aren't spice people. I think there are a variety of sausages that might work, it's just a matter of finding one that matches the seasoning of the dish overall.
  • Yeah I'm thinking sausages as well. Easy peasy prep too. Kinda on the fence with chorizo, the flavor might overpower. Do you have a go-to place that makes their own sausages from scratch? A chicken sausage might complement really well.

    There's also the possibility of a pork tenderloin if it's a recipe where meat is separate from the butternut.

  • I do a butternut squash thing and use apple chicken sausage in it.  I'm not sure chorizo would do it for me.
