I'm trying to organize my guest list and I have a lot of family members with children who I plan on inviting to the wedding. Do I include the children's name when addressing the envelopes? If I am supposed to do this and the children do not have the same last name (say relative is a single mom but children have Dad's last name), how do I word that? I also want to add that most of these children are age 10 and younger.

The purpose of the inner envelope (or the outer, if you only have one) is to convey exactly who's invited, and "Family" can be a little ambiguous. It's a safer bet to list out the names of those invited. The way you wrote it above is correct, but (IMO) it's also fine to leave off the children's last name.
But if you're using outer envelopes only, everyone in the household who is invited, adults and children, need to be listed on them.
