Caterers (sorry its long)

What do you all know/heard of about Bixby's caterers?  I have been in email contact with her and so far she is fantastic, but I'm just wondering if anyone has any experience with them.

Originally, we had our heart set on Toscana's.  Everyone raves about the food and whatnot.  Well, after trying to set up a tasting with them (I even took off work because they only do tastings until 4pm), no one ever responded.  Then eventually they did (I had to take off another day of work) and it was FANTASTIC!!!  We loved the food; we loved the presentation; we loved everything.  We were for sure going to go with them.  The coordinator was supposed to give us a quote in about a week.  No problem because we also need a tent, tables, chairs, etc. through them.

2 weeks go by and not a word.  We have called and email trying to get in contact with the coordinator.  She finally quickly emailed us to say that she has been sick.  Not "I'll get right on it, I apologize" nothing like that at all.  That was 2 weeks ago!!!  So I said forget it and I don't want them as my caterer.  If they can't get back to me with something so simple, how can I trust them on the actual wedding day?
Am I being crazy?

But so far I am excited with Bixby's.  She has been so prompt and friendly, asking questions trying to get a feel for what we are looking for.

    If you are on a budget, like you stated in your PP, then you are probably better off without Toscana.  They are known for being really expensive.

    There were a couple of girls on here who were looking into Bixby's and The Greenery.  Those were the two that are decent, price and food wise. 

    I would do a post titled "Greenery or Bixby's Caterers".

    I've worked with The Greenery through work, and the owners are really nice.  Originally, when I was looking to get married at The Carriage House, I had looked into The Greenery, and they seemed fairly reasonable for a caterer.  I ended up going with Clarion Belle Hotel, and they're taking care of pretty much everything for me.

    i did some research into these ones-
    toscana (which i found to be really pricey and out of my budget, but heard they have great food)
    bixby's (which i thought was reasonably priced, they got back to me in a timely fashion and seemed very enthusiastic)
    The Greenery- which i choose as my caterer...my personal mtg w/craig went great, he was flexible planning the mtg b/c i have a weird work schedule, always prompt with returning my emails, he seemed very prepared, has worked at my venue before which is an odd venue, and i loved the fruit carvings that he does which are included in the pricing, he sent me multiple estimates on different menu options and i know someone else who had a tasting and they said it was delish...

    I contacted Bixby's and they said they wouldn't do anything for less than $6000.  That's the budget for my entire wedding...!   My FI wants a sitdown meal and all we can afford is $2000 for 90-100 guests.  Shall I call Chick Fil-A? ;-)

    i also recommend the greenery caterers. on top of all the great reviews shown here, when i first checked into them, i had asked the head of my school department (a man who's been in the food business & catering specifically for about 40 years) & he said that they're 1 of the top caterers in the state. & they are so willing to work with you on pricing!
