Did my tasting yesterday!!

I'm still a little hungover from trying all the wines and champagnes we will offer haha!

Appetizer: summer asparagus salad with arugula and grated cheese and a fantastic citrus-y dressing

Entree: choice of: (1) chilean seabass over israeli couscous with veggies; (2) filet mignon with mushrooms, garlic whipped potatoes, and veggies; or (3) vegetarian

Desert: trio of sorbet in a delicious almost ice cream cone cup (but more of a brittle), and fresh fruit

Wedding cake

 

 

Now I just need to decide on my 8 passed appetizers (4 hot, 4 cold)

Whoo!  Things are finally coming together!!

    Why are you nervous?  The tasting has been the best part of wedding planning so far!!

    @jenna8984 Those gifs are exactly what I looked like during my tasting. Hands down my favorite part so far. They even supplied take home boxes for what I couldn't stuff down my throat!

    The seabass was the greatest thing I have ever had in my life.  No joke.  I want to order like 5 extras at the wedding all for me
  • What is the vegetarian option? The other ones sound super good, but I'd hate for vegetarian guests to get stuck with something boring.

    We don't know yet.  It depends on what is freshest at the time.  I actually don't think we have any vegetarians, though.  We have 3 vegans, who are all getting special meals, and a couple of allergy people, who get special meals (plus 7 kids meals). 

    The chef recommended that for the vegetarian options, though, we wait to see what's freshest, and to see how many people RSVP that they want vegetarian.  If it's only like 5, we will call them individually and see what they like, and the chef will make them each a custom plate.

    I've always heard of them for myself and friends being after you book. Sometimes it's just the couple, and sometimes it's a night with 100 couples because it's easier for them to make it all in bulk.

    We did it after, but before we booked, they gave us a complimentary dinner at the venue.  It's a hotel, and the food they serve at their restaurant has the same chef as the one for our wedding, so that made it way easier to know the food would be amazing!
  • @jenna8984- I'm pretty sure that at the venue where my parents were wed they did a bulk dinner for all the couples that were interested but it was sooo long ago I'm just not certain. Thanks for the response.

    @dcbride86- Oh ok, that makes sense then. I was just wondering how it worked because of that very reason. I was just thinking "What if you book and then you do the tasting afterward and don't love the food?" But that clears things up, thanks.

    @dcbride86 Wow! What service! That sounds amazing. And 8 passed apps??? Once again, jealous.

     I'm excited to taste what we've picked but our venue has a choice of two caterers that they do business with, and FI really wants this traditional Indian dish that's normally served at weddings. We picked the one that had a wider range of food and seemed more experienced, but we basically have to hope and pray that they can make it right. Otherwise we'll have to figure out some shenanigans like ordering a tray of biryani from the food stand at the mall and carting that over day of. I avoid conflict and hardship like the plague so I'm really hoping that it goes well.

    They gave us a list of like 100 things, but we can also select things that aren't on the list. We get 4 hot and 4 cold, so far, we've decided on:

    -Fresh mozzarella and tomatoes

    -Tuna tar tar

    -Spinach and feta in philo dough

    -Maybe some kind of meatball thing, or mini sliders

    Any other suggestions

    That's interesting. We got to choose (and taste) ours ahead of time, and it was SO yummy that a lot of non-vegetarians chose to order it instead of the chicken or salmon (I think out of ~200 adults, 14 chose it. Only two people were actually vegetarians). This was fantastic news to me since it was the least expensive of our three options. ;) 

    Wild Mushroom Strudel: Confit of Wild Mushrooms baked in crisp Phyllo Dough, presented with Butter Poached Asparagus,Alba Raspberry Wine Reduction, Cilantro Crème Fraiche & White Truffle Powder.

    We could have chosen and tasted our vegetarian option ahead of time, the chef just suggested that we don't since he doesn't know yet what will be freshest at the time, and we don't have a lot of vegetarian guests.  This way, he can make something special for the few vegetarians we do have based on their individual tastes.
