What Goes with Mimosas and Roses? Any suggestions?

Hi all! A little background: my fiance is Australian, and I plan on using mimosas and red roses in my bouquets. The wattle is the national flower of Australia, and the closest I could find to that in the States is the mimosa; the red rose is the national flower of America. The flowers are going to be red and yellow, and my MOH  suggested that I use white orchids with yellow and red accents. I guess my question is if anyone on this board has used mimosas in their wedding- do they have a lot of pollen? Are they easy to carry? And would the (three) smells clash?

Actually, the wattle flower is a variety of acacia, which is available in the US. The only problem is that it won't likely be available if you aren't getting married in spring. I don't think the smells would clash because they all have such a light fragrance (if any). As far as if they are easy to carry, I guess that really depends on how your bouquet is constructed. I'm not sure about the amount of pollen on mimosas though.

Thanks for the info- I'll keep it all in mind! :) I didn't know about the acacia- I was going based on pictures. I appreciate it!
