NWR- Need Recipe

Fiancé has been working out of state for 6 weeks. He comes home tomorrow, which is also Father's Day. I want to make him homemade spaghetti sauce and an icebox lemon pie. I don't normally make sauce from scratch, but want to for him. Does anyone have any full proof recipes?

  • My sauce is pretty basic, it doesn't contain any sugar.  So if you like sugary sauces, mine's not the one for you!  I start with Olive Oil in the pot.  Then add pepper (italian long hot, if you like spicy!), onion, and garlic.  I chop my veggies big, since I blend everything together, but if you like chunky sauces, then just chop the veggies to bite size.  Then add either cans of stewed tomatoes or fresh tomatoes chopped up.  Try to remove the seedy parts of the fresh tomatoes.  I will add any fresh herbs I have from the garden.  Salt and pepper to taste.  I also will add Old Bay seasoning for a little extra kick too.  Once you have everything in the pot and it starts bubbling, turn it on low to simmer.

    I do penne alla vodka pretty baisc:

    Start with olive oil, heat it up, add chopped onions (1/4 cup) and garlic (3tbs less if you prefer)

    When the onions go clear/the garlic turns golden, add 1 can (16oz can, or 2 8oz) crushed tomatoes.

    Simmer for a few minutes, then add salt and Italian spices (oregano, basil (fresh or dried), or a spice mix) to taste. Let simmer for 20 minutes.

    Add 1/4c plain vodka, simmer for another 15 minutes, then add some red pepper flakes for spice 

    Add heavy cream, I usually use 3/4 cup but this could depend on your preferences. Add a little ad a time until it's the shade of orange you like. Simmer for another 15 minutes.

    ETA: the bolded, I forgot this part yesterday :(
