Dinner inspiration

Help! I'm so bored of making the same things for dinner all the time. What is your favorite dish to make? Or a recipe you've been wanting to try? Or heck, just tell me what you're making tonight. I'm pretty much open to anything.

  • I just made Italian beef sandwiches for the first time last week, and it's our new favorite. My usual favorite thing to make is baked lemon pepper chicken.

  • We made chicken quesadillas last night with black bean salsa in them that I really liked. 

    The black bean salsa is just:
    1 can of black beans, drained and rinsed 
    1 bag of frozen corn, not thawed 
    half a red onion, diced 
    2 or 3 garlic cloves, minced 
    1 bunch of cilantro, roughly chopped 
    a drizzle of olive oil
    little bit of red wine vinegar 
    the juice of 1 lime
    cumin
    sea salt 
    *mix everything together and the frozen corn will chill the other stuff as it thaws 

    We took that, some cooked chicken cut into bite-sized pieces, sharp cheddar cheese, and some hot sauce (for H) and layered it all on a flour tortilla. 

    Then heat a pan on medium-high with enough vegetable oil or canola oil to coat the pan. When it's piping hot, lay the tortilla in there that has all the junk on it and set a second tortilla on top. When the bottom one turns golden brown, flip it. Cook till the other side turns golden brown. 

    This is my favorite thing at the moment. No idea what we're making tonight.

  • Do you have time to make a crock pot recipe? On days when I'm too tired to do anything else, I put a pork loin in the crock pot with some BBQ sauce and serve it with buns and a bagged salad. 


    (plus mint and minus the red onion because I really don't like red onion!)

  • I made lasagna on Sunday that I haven't made in a while. It was delicious, plus we got leftovers for the week and had enough to freeze for some meals in the future.

    Tonight I am making Carolina-Style Barbecue Chicken (you can find the recipe on Food Network dot com; it is by Food Network Kitchens). It is soooo delicious and despite what it looks like, not overly mustard tasting.

    My other most favorite thing to make is Hot Fried Chicken using the method/recipe Carla Hall does in her recipe for Hot Fried Turkey from The Chew. The leftover spiced oil is also great as a marinade for steak.

  • Tonight I'm just grilling a filet mignon  and some veggies on the grill.

    Lately I've been marinating turkey tenderloin with olive oil, lemon thyme, basil, garlic, lemon and dijon mustard.   Then grilling on the outside grill.     It has great flavor and the leftovers are great for sandwiches.

    This time of year I like to  grill steaks, chicken or pork and then adding some veggies.  Simple, easy and doesn't heat up my kitchen.






    What differentiates an average host and a great host is anticipating unexpressed needs and wants of their guests.  Just because the want/need is not expressed, doesn't mean it wouldn't be appreciated.

  • Ok so these are our regulars- mostly self explanatory or you can google exact cook times-

    shake n bake pork chops or shaken n bake chicken thighs with veg

    ground turkey tacos or steak fajitas (cut into bite size pieces and cooked in skillet with taco seasoning)

    regular lasagna or buffalo chicken lasagna

    pasta with sliced italian sausage in vodka sauce, or meatballs in tomato sauce

    roasted whole chicken with veg

    grilled hamburgers or turkey burgers with frozen french fries

    sour cream chicken over rice (this is my own recipe if anyone wants it)

    I just made THIS last week- I tripled the ingredients because we like leftovers- and it came out amazing so it will be a new reg (lemon asparagus dill dill chicken & rice).

    Tonight I'm making THIS for the first time, I believe I got the recipe from @novella1186 (hummus crusted chicken)

    about once a quarter I make up a crockpot full of meatballs and sauce.  Then I portion them out into individual packets using my Food Saver.    I also make my own garlic bread and portion them out.   When I'm not feeling too insipred I just cook some pasta, reheat the meatballs and bread and I have a dinner in less than 20 minutes.

  • Tonight I'm making stir-fried pork, shiitake mushrooms, broccoli and savoy cabbage with loads of ginger and garlic.

    Tomorrow we're going to grill: chicken sausages, corn on the cob, and a giant salad

  • The chicken/hummus recipe just reminded me of something else easy we like to make; 

    We cook (or grill) diced chicken with thyme, lemon juice, salt & pepper and then put it in a pita with some veggies (red onion, spinach, cucumbers, tomato, whatever) feta, and hummus. It's super quick and easy, and pretty healthy compared to other stuff we make. 

    Another go-to is Rachel Ray's cowboy spaghetti (it involves BACON!!) 

    Or throw some ribs in a slow-cooker with bbq sauce (if you have time; you need at least 4 hours from what I remember) 

    I'm trying to think of our other go-to easy dinners... I get tons of recipes from Cooking Light (you can go on their website and print them for free) because they're always pretty easy and fairly healthy, and I've never gotten anything that turned out bad from there.

    I think you got it from @JCBride2015, and I had posted it before that :) It's made the rounds on TK! 
  • @emoc625 bear with me as I don't use exact measurements

    1 packet of breast tenders (or 2 breasts) - cut into bite size pieces. Heat about 2 tablespoons butter in a deep skillet and when it's melted, add the chicken. Season with salt/ pepper/ adobo. About 10-12 minutes they should be cooked through- I just keep mixing and flipping them every 2 minutes or so to make sure all sides get cooked.

    While that's cooking, make 2-3 cups minute white rice- bring equal cups water to a boil, add rice, stir, cover, turn heat to low. Stir after about 5 minutes and it should be perfect- remove from heat, leave covered. (if it's watery, leave on heat for a few more minutes)

    When chicken is cooked through, turn down heat to med/low and add 1 cup of chicken broth, 1 entire 16oz sour cream, and juice from half a lemon. Stir around until the sour cream completely melts into a thick liquid sauce. Add fresh ground pepper and a little paprika if you like. Serve in a bowl over rice, adding extra sauce for the rice to absorb.

    This is my husband's favorite and it yields enough for lunch the next day for each of us too.

    My best friend always has the best recipes I steal from her. Some of my favorites: pasta bake, buffalo chicken sandwiches in the crockpot and her tomato, avocado and mozzarella salad. The pasta is so easy-you take whatever pasta you want and mix marinara and alfredo sauces, pour it over the noodles, throw it in the oven and bake it. I usually add a salad or veggies and garlic bread.


    ETA: you also top the pasta with shredded cheese before you bake it

  • Tonight we're having waffles.

    Our regular go-to meals are: homemade pizza, spaghetti, grilled burgers, rotisserie chicken, hot dishes (chicken noodle, sour cream noodle bake, tater tot hot dish), breakfast (omelets, waffles), and ribs/roast in the crock pot.  We are in love with Mississippi roasts right now.  We eat it day one with mashed potatoes, and then on sandwiches for a few days.

    My friend gave me a great recipe for crock pot jambalaya CLICK which she served at her place.  I haven't made it yet, but it's on my list.

    Yes!  I remember that recipe.  Mmmmm now I want hummus crusted chicken.

    We are making something from HelloFresh tonight; maybe burgers?  I forget what came in our box but it's been working out well so far.

  • We did an Orzo Salad with grilled Prawns last night.

    Super simple, no oven involved so it didn't heat up the house too much more on a scorcher of a day.

    Basically, cook orzo, put hot orzo in a large bowl, mix in cherry or grape tomatoes, baby spinach, toasted pine nuts and shredded basil and a dressing made from red wine vinegar, shallots, garlic and extra virgin olive oil. Serve with chives and feta on top. Grill Salmon or Prawns to serve with it.

    It sooooo yummy.

    I'm not in the mood for anything in particular and it is driving me crazy!  I know I need to pick up something to make for dinner for DH and I, but nothing is jumping out at me.

    I am, however, getting the stuff to make a no-bake eclair cake!
  • I hate cooking in the summer. My recent go-to's are:

    http://damndelicious.net/2014/10/11/one-pot-garlic-parmesan-pasta/ (I'll frequently saute shrimp or chicken and a veggie on the side then mix it in. Shrimp and asparagus are a favorite).

    Lots of fritattas-- think scrambled eggs with all of the bits of leftovers from the fridge. Brown it under the broiler with a bit of cheese to make it crusty and more delicious.

    I've also been dreaming of that deliciously trashy coleslaw with ramen noodles. I need to make that again soon...

    Tilapia Tacos with Chipotle Aioli 

    Ingredients

    •  1/4 cup(s) plain low fat Greek yogurt   
    •  1/4 cup(s) reduced-calorie mayonnaise   
    •  1 Tbsp canned chipotle peppers in adobo sauce, minced (or more to taste)   
    •  1 tsp fresh lime juice   
    •   1 Tbsp (minced) uncooked red onion(s)   
    •  1 Tbsp cilantro, fresh, minced   
    •  1/4 tsp ground cumin, 

      Fish, Tortillas and Toppings   
    •  3 Tbsp fresh lime juice   
    •  1 Tbsp olive oil, extra virgin   
    •  1 tsp ground cumin   
    •  1/2 tsp minced garlic   
    •   1 pound(s) uncooked tilapia fillet(s)   
    •  2 spray(s) cooking spray   
    •  3/4 tsp kosher salt   
    •   2/3 cup(s) packaged coleslaw mix (shredded cabbage and carrots)   
    •  8 small corn tortilla(s)   
    •  1/4 cup(s) cilantro, minced (for garnish)   
    •   1/4 cup(s) (minced) uncooked red onion(s), minced (for garnish)   
    •   1/2 medium fresh lime(s), cut into wedges   

    Instructions

    • In a small bowl, combine first seven ingredients (yogurt through cumin); chill until ready to use (may be made up to 4 days before use, covered and refrigerated). 

    • In a shallow dish, combine lime juice, oil, cumin and garlic; add tilapia and toss to coat. Marinate in refrigerator for 30 minutes. 

    • Coat a grill or grill pan with cooking spray; heat to high. Remove tilapia from marinade (discard marinade). Grill fish until it flakes easily with a fork, about 3 to 4 minutes per side; sprinkle with salt and slice tilapia into 8 equal pieces. 

    • While tilapia cooks, wrap corn tortillas in aluminum foil and warm on grill or in oven. 

    • To serve, top each tortilla with 1 tablespoon slaw, 1 piece tilapia and 1 heaping tablespoon aioli; garnish with cilantro and red onion, and serve with lime wedges. Yields 1 taco per serving.

    Sesame Noodles with Chicken

    Ingredients

    •   1/2 pound(s) uncooked whole-wheat spaghetti, or whole-wheat udon   
    •   1/2 cup(s) uncooked scallion(s), green parts only, chopped   
    •  1/2 pound(s) cooked skinless boneless chicken thigh(s), cut into thin strips   
    •  3 Tbsp rice vinegar   
    •  3 Tbsp low sodium soy sauce   
    •  2 Tbsp hoisin sauce   
    •  1 Tbsp dark sesame oil   
    •  2 tsp chili sauce, with garlic   
    •  1 1/2 tsp honey   
    •  1 Tbsp cilantro, fresh, finely chopped   
    •  2 tsp sesame seeds   

    Instructions

    • Cook noodles according to package directions. Remove 1/4 cup of pasta cooking water; drain and rinse.

    • In a large bowl, combine noodles, scallions and chicken; toss gently but well. 

    • In a cup, combine reserved cooking water, vinegar, soy sauce, hoisin sauce, oil, chili sauce and honey; stir well.

    • Pour vinegar mixture over noodles; toss gently but well to coat noodles. Sprinkle with cilantro and sesame seeds; serve. Yields about 1 cup per serving.

    I made this on Friday after seeing your post (w/ shrimp and asparagus even), and it was such a hit, thank you!! It's definitely been added to our permanent rotation!
