What do you do with a million green beans?

SIL and her husband are going out of town for a while so she stopped by and gave us their farm share (yay!). But it included like 20 pounds of green beans. 

Usually I just snip the ends and steam them, but to get through all (or even half) of them we'd have to be eating steamed green beans for breakfast, lunch and dinner. 

Do any of you knotties know of some good recipes?

  • The way I cook green beans is by snapping them into pieces that are about an inch long (after you snap the ends off too). Then I boil them in water with a little apple cider vinegar until they are cooked. Once they're cook I drain them and put them back into the pot, cover with water, add 1 cup sugar, 1/2 stick butter, a little vegetable oil, salt and pepper, and bring to a boil. Once the boil, stir them and turn down to a simmer and cover. Then just let them cook. The longer the better. I've cooked them to upwards of 6 hours before. the secret is to not touch them once to cover them, DON'T STIR! They are delicious!

  • I love to blanch them a bit then stir fry them in a blazing hot pan and with sesame oil until they blister. Turn down the heat a bit then add garlic, ginger, soy and a bit of oyster sauce. Delicious! Even my boys will eat them without whining. I usually serve them with homemade fried rice.

  • I like to make chicken stir fry with green beans! If I use green beans I usually don't even use any other vegetables other than onions.

    I also like to make them with bacon and corn. Fry up some bacon, and put it on a plate with a paper towel to let it cool. Saute diced onions in the leftover bacon grease. Add steamed green beans and corn (optional). Stir it around and then crumble the bacon and add to the dish. Salt and pepper to taste. It is sooooo good.

  • I like them pickled, if you're in the mood for a project.
  • I sauté them with red pepper flakes, garlic, onion and seasonings, then add a cup or two of chicken broth and simmer until the broth is reduced to a couple table spoons of sauce. Everyone loves them!

    I also do green bean casserole from scratch, put them in foil packets with chicken, potatoes and seasonings to cook, roast them in the oven, and grill them in a basket. The char they get is delicious!

    My mom makes sweet and sour green beans with bacon that are awesome too. They have sugar and vinegar to make the sauce, NOT the bright red stuff that comes on Chinese food.
  • Someone recently mentioned to me a restaurant that they were at had a green bean martini. I assume it was like an olive or pickle martini : soak the green beans in vodka for awhile and then use them as a garnish and/or use the vodka from the soaking to make the martini. 
  • This wouldn't help you, but I'd give some to our kitten, Aggie. He loves the damn things. He'll play with them for hours around the apartment. He won't eat them but just plays with them. He'll growl at the other cat, Buddy, when he wants to see what's going on. Buddy then looks at him like he's nuts and goes about his business.
  • I don't have any recipes per say, but you can always freeze them!

  • Green bean casserole all the way!  I love that stuff.  You can probably trim them and freeze them pretty easily too.

    Quasi-related...... i have like a zillion scotchbonnets.  What can I do with them?
  • I would blanche them in boiling water for about half the normal cooking time.  Then put the beans into an ice water bath to stop the cooking process.  Then lay them out on trays with paper towels underneath.  Pat them dry and then freeze them for future use!
  • Pickle them.  Pickled green beans can be done super easy as a fridge pickle and don't need canning.

     

  • I love green beans, and FI hates them.  So when he's gone I EAT ALL THE GREEN BEANS.  

    My usual method is just to blanch them, then I heat up some olive oil in a pan and saute some shallots til they're soft, then throw in the green beans and finish them to the desired texture (I prefer them crispier than softer).   If I'm feeling ambitious, instead of using olive oil, I'll cook some bacon in the pan and then chop it up, and do the above stuff, only with the bacon grease instead of olive oil.  I throw the cooked bacon in at the end.

  • I don't have any fun recipes because I just inhale all green veggies by themselves...but some of the recipes on here are amazing and I am totally bookmarking this thread. You guys have such good ideas!

  • I've never made them - but pickled green beans are awesome in a caeser/bloody mary. Mmm mmm good.

    We were in a similar situation last year and ended up canning them.  It's worked out very well and we still have some!
  • totally pickled! They're the best. There's tons of recipes out there. So good especially when it's with cloves of garlic and the garlic soakes up the juices!

    My mouth just watered.
  • I just googled some pickled green bean recipes. Now I'm drooling and dying to eat pickled green beans but I'm stuck at work for another 46 minutes! (Not that I'm counting)
