gooseberries, eggplant, cabbage. . . . . um, what?

We got an amazing box of mixed produce the other day that I have to make dinner with. I am at a loss so I came here for your genius knottie ideas!

there are a bunch of eggplants (possibly chinese, they aren't traditional huge purple ones that I am used to seeing)

one head of green cabbage

a bunch of small zuchinni (too small to spiralize)

some onions

heirloom tomatoes

a pint of gooseberries

What would you make? I am thinking of some sort of asian stirfry with the eggplant and cabbage, but I am not sure. I have to go to the store after work anyway because I think I am going to throw the gooseberries into a strawberry muffin with a cinnamon streusel topping.

Nothing with shrimp or coconut allowed, and no pasta because we had that last night. HELP!

I would make a a ratatouille with the veggies. Similar to this http://thatovenfeelin.com/layered-ratatouille-casserole/

Then tomorrow make some cabbage steaks, and use the gooseberries in a dessert.

For the little zucchinis, you can grate them up for zucchini bread/muffins, or I've even used them in turkey meatloaf (like in this recipe: http://www.skinnytaste.com/2012/07/bacon-topped-petite-turkey-meatloaf.html) Could also convert them to burgers and top w/ your tomatoes and onions that you have. Make coleslaw with the cabbage.

Zucchini are also just good in a large dice (like 1/2" pieces or so) and sauteed real quick in olive oil with red pepper flakes and garlic, salt, and pepper.

I've never cooked chinese eggplant but it looks like if you google "chinese eggplant" a bunch of recipes come up.
