Vegetarian App idea

I'm hosting card club.  We do heavy apps and 1 dessert.  There is one vegetarian.  I was going to a 7 layer greek dip with veggies.  I'd like some sort of tarlet/puff pastry/slider I could do in a vegetarian and meat eater version.  Or maybe a fe other dips?

I was going to do wraps, but someone did that this month.

    I was thinking caprese skewers, but I didn't feel hearty.
  • The dip sounds good, but what about one that's similar idea as a dip but more hearty. For years we made this, but did it different ways to appeal to our taste buds - like add olives, and tomatoes and my dad's side had jalapeno peppers.

    isn't it typically vegans who don't eat cheese? {I've personally never heard of a vegetarian not eating cheese}

    vegans don't eat anything with any sort of animal product/byproduct

    what about a bean dip of sorts? quinoa salad? The thai-inspired quinoa salad that i sent to you is vegetarian, and really good.

    Vegetarians eat cheese.  Putting aside the rennet, the cheese itself is made from milk.  Generally not an issue.
  • @*Barbie* Making cheese doesn't hurt the animal - when the farm is good and proper. Typically the vegetarians I know eat cheese but specific kinds they know where it's from
  • @MissKittyDanger - if they're using animal rennet, it generally comes from the stomach of a calf that was used for veal. so yeah, dead animal. if they use an artificially produced rennet, it doesn't.

    She eats cheese. I want finger foods not salads. The Greek dip is basically layers of human s feta and veggies so I was trying to avoid more beans. 

    I did see mini cheese balls on pretzels that looked cute but a pita to make.

    A bag of frozen spring rolls are super easy. I second bruschetta. Quiche/ mini quiches are good and can be made with or without meat. Pinwheels are another that can be both. 
    Spinich-artichoke dip in the crockpot. 
  • @MissKittyDanger - i think rennet is used for most hard cheeses, but most soft cheeses are made without. you'd have to look at the ingredient list to be sure. 

    Historically rennet comes from the calf stomach - it's an enzyme that's used to turn the milk into cheese curds. if you read the Little House books, Laura Ingalls actually described the cheesemaking process, which they would start on slaughtering day. (I think it was Little House in the Big Woods).

    With newer technology, there's artificially produced rennet, and I believe plant sources as well - which is likely what is being used in "vegetarian cheese."

    I'm not a vegetarian, so i've never paid much attention. 
  • There's a vegan restaurant down the street from my work that makes cheese out of cashews.  One of these days I'll have to try that.  But I'm skeered, lol.

  • Thug Kitchen has an appetizer cookbook. I love their spinach artichoke dip. Most people don't even realize it's vegan until they ask about it. I also usually do guacamole, hummus, and other veggies, breads and such.
