  My advice is to make the stamp with what your last name will be when you're married and don't use it until you're married.

  My advice would not be having a stamp made because it'll be used for your wedding and then what?  
  
  I also agree with your FI in that it sounds like you haven't earned your Doctorate degrees yet with "The Future Doctors (Last name)"..  The Future Mr. and Mrs. is still appropriate whether you're doctors or not...

  I wouldn't make a stamp to be used just for during your engagement. Why do you need one? @MesmrEwe is correct though that The Future Mr. and Mrs. is appropriate. When I address things to my friends who are doctors (and married) I do Drs. First Name and First Name Last Name. For example Drs. Jane and John Smith. Usually though I don't do an honorific.
  
   Also, just to point out an etiquette technicality, unless you and your FI are medical doctors the honorific isn't suppose to be used in a social setting. That is an old rule and not always adhered to and I think makes a Ph.D. seem less (my husband has a Ph.D.). Just another reason to use the Mr. and Mrs.

  I would stick with Mr. and Mrs. or Ms. rather than "The Future Drs. X". In a social setting I wouldn't use Drs.
  
  But do you plan to use this stamp for any other occasion? If you do, then I would just use "Mr. and Mrs." or "Mr. X and Ms. Y" and not use it until after your marriage.

  You’re not going to use this stamp long, but if money isn’t an issue whose to say you can’t get one now and one after you’re married. 

  
  

  I agree with your FI that “The future Drs” make it sound like you’re becoming doctors in the future not getting married. If you want the future or soon to be I’d use Mr. and Mrs. 
  
  My husband and I both have our PhDs; I appreciate when our invites are properly addressed to Dr. and Dr. Charlotte. But we rarely (never?) sign anything socially that way. I do use my title on LinkedIn and in some work settings where I need to signal authority on a topic but I never use it in social settings. But appreciate when other people remember to. For me it would depend on how you both use your titles.

  The "future" anything isn't a way to address anyone on paper - it's how you word a toast.
