  • I'm hot. Summer is here for real this week. I'm trying to hold off on turning on the AC since we'll be gone this weekend, but it was 77 degrees upstairs when I went to bed last night, so we'll see. I wish I'd gotten the screens replaced so I could open the windows upstairs, but too late now. I will never understand why the previous owner took them all down. I guess they were turn the heat off, turn the AC on same day kind of people. 

    Otherwise SSDD here. I'm trying to settle into the new role, although it's pretty much the same thing on a different team. Some of my coworkers who didn't get new roles are leaving next week, so that's just all around shitty.

    Pretty SSDD here.  Work is going smoothly so far, and this evening is the third consecutive Wednesday with a spring concerts at 7.

    I am such a wuss when it comes to sleep and temperature. It has to be like 63-65 if I'm sharing a bed with H. If I'm alone, I can let it get to about 68. I don't understand. I freeze all day long. But then in the sun I feel like I'm dying. And at night I want it freezing. I'm a mess. 

    Otherwise, SSDD here. There's a fire decently close to my house. Not so close we're actively packing but close enough that after the Palisades fires I'm thinking "anything can happen." We already have go bags and we put out the cat carriers just in case. H has been watering the yard off and on the past two days to keep everything moist and prevent spot fires (there have been several offshoots from the fire). I am having a little trouble breathing today because our office doesn't have great air filtration. In fact it's basically open. The last wind storm we had a bunch of stuff blew into our office from the sky light. We reported it to facilities and they told us it was normal. Um, yeah, that's not normal. A skylight is supposed to be air/water tight. So I hope they enjoy the new printer they're going to be purchasing when the Super El Nino hits us in the fall/winter and we experience rain indoors. 

    I made a great new meal last night! (Ignore the terrible plating and quality of the pic, and also where I chose to take the picture because our kitchen is the size of a postage stamp and the other surfaces were full of baking sheets and cutting boards, lol). Also I'm sorry if the picture is huge. And that all made it seem like this was a huge undertaking to make but it was actually a pretty simple meal; I'm just a chaos cook. 

    Mediterranean Style Sweet Potato with Chickpeas
    --served with chicken breast, broccolini as protein/side

    Ingredients
    Sweet Potatoes (2)
    Spices: Salt, Pepper or Lemon Pepper, Garlic Powder, Onion Powder, Paprika
    Lemon 
    Plain Greek Yogurt (8 oz)
    1 Can Chickpeas 
    2 Chicken Breast 
    Broccolini 
    Garlic Clove (2)
    Dill (2-4 TBS--I didn't measure), chopped 
    Olive Oil or Avocado oil

    Sweet Potatoes 
    Bake sweet potato at 450 F for 60 minutes

    Chickpeas
    Rinse and drain chickpeas, let sit draining for 30 minutes, then pat dry
    Prepare baking sheet with parchment paper, add chickpeas, smash slightly. Season chickpeas with salt, pepper, olive oil, paprika, garlic onion powder to taste preference. Can add squeeze of lemon juice if desired. 
    Cook chickpeas at 450 F for 20 minutes 

    Sauce
    Mix yoghurt, with zest of lemon, juice of 1/2 lemon, dill, salt/pepper to taste. Grate or chop garlic cloves and mix in. 

    Chicken Breast
    Preheat oven to 400 F 
    Pat dry chicken breasts, season with salt, lemon pepper, garlic powder, onion powder, paprika
    In cast iron pan on medium high heat, add avocado oil, cook on one side for 5 minutes to sear, and then flip, add to oven 400 F for 13-18 minutes depending on side of the chicken breasts.
    Remove, let sit for 5-10 minutes, then slice

    Broccolini 
    Season with lemon, garlic powder, onion powder, salt, lemon pepper, olive oil. Bake at 400 F for 10-13 minutes (until crispy) 

    Assemble--Sweet potato, top with sauce, then chickpeas. Broccolini and chicken on the side (or chicken on top if desired)

    Sweet Potato--112 cal, 26 gm carb, 4 gm fiber, 2 gm protein, 0.06 gm fat 
    1/2 cup Chickpeas--120 cal, 21 gm carb, 6 gm fiber, 7 gm protein, 2.25 gm fat 
    4 oz Greek Yoghurt--40 cal, 5 gm carb, 0 gm fiber, 8 gm protein, 0 gm fat 
    Olive Oil (approx 1.5 tbs)--178.5 cal, 0 gm carb, 0 gm fiber, 0 gm protein, 20.25 gm fat
    Broccolini (approx 3.5 oz)--35 cal, 6 gm carb, 5 gm fiber, 3.5 gm protein, 0 gm fat 
    Chicken Breast (5 oz)--154 cal, 0 gm carb, 0 gm fiber, 33 gm protein, 1.75 gm fat 

    Total Nutrition info per serving (approximate)
    Calories: 639 cal, 58 gm carb, 15 gm fiber, 53.5 gm protein, 24.31 gm fat
    [realistically I was only able to eat half a sweet potato, a whole was too much]
    Meal with half sweet potato: 579 cal, 45 gm carb, 13 gm fiber, 52.5 gm protein, 24.25 gm fat

    I’m feeling pretty bad for some friends of mine. They gave up everything to reposition their lives and buy a b&b they loved and called a home away from home. Thought they had the keys and even were 1/2 way packed. They found out today the deal went through. They’re taking it pretty hard and I can see why.

    I think I must have missed it but did you take an integral role @MyNameIsNot after a reorg? 

    Work had been weird- we’re closely managing expenses, slow rolling backfills and documenting and justifying a lot of what we do. I don’t love it and the vibes just feel bad.

    I did. My entire department was eliminated, so they took the work and split it into new teams on two different departments. I got a newly created role but it's basically doing the same stuff I've been doing, just with different coworkers and thus far no boss.
