Anytime, really. Just don't wait until the last few weeks especially if you're wanting something really elaborate. It's kindof hard to give you a time frame though since you didn't give any information on your date.

Like any other vendor, if you have your heart set on a specific bakery book asap so you know the date is available.

Do wait until all you get is a grocery store cake.

I'd go based on what the bakery says. I say it's never too early to figure out what you want design-wise, tastings are usually done 2-3 months in advance to your date.

I personally wouldn't wait until 2-3 months before your wedding to have the tasting unless you already have the bakery booked and just need to pick your flavors.  I live in NE Ohio and the majority of weddings take place between May - October because you know your guests won't get snowed in (or out, depending on where they are coming from).  As a result vendors book fast  and far out for those months.

Your area could be different.  I suggest calling a couple of bakeries, giving them your date and ask if that is a high demand time.  If you call 3 and all 3 are already booked, you know you are in trouble.  If you call 3 and none are booked don't assume it is a low demand time (for example, if your date is 2 years away then no, they won't be booked, but if the wedding is in June then it is safe to bet it is a busy month for the bakery).  If none are booked ask how busy that time of year is for weddings, how far out they except orders and when they suggest getting serious about locking down a bakery.

We booked our bakery 10 months in advance, mostly because it is my favorite bakery in our town, and I wanted to make sure we got our wedding date reserved with them.  You probably don't need to book yours that far in advance unless you really have your heart set on a certain place.

I booked ours almost a year in advance, because they were our favorite baker since I was a child.
