It's hard to bake a cake that's more than about an inch and a half tall. So if you have a typical wedding cake layer that's about 3 inches tall, it's two layers of cake with a filling between.
There's lots of choices for filling, from mango preserves to frosting. Talk to your baker about how many choices you'll have to make once you've decided on the height of your cake and each layer.
We are planning on a very simple, buttercream cake with the buttercream icing between the layers of cake. We aren't "filling people" and this was the best option for us!
Another option might be to have the different tiers of your cake differently. Some people like filling and some people like icing. We are having a 4 tier cake and are alternating the tiers. Top tier is chocolate cake with butter cream frosting as the filling and the second tier is vanilla cake with rasberry filling. Just go with what you like but remember that your guests may like something different. Incorporating different fillings/cake flavors in your tiers may be the way to go. Have one tier just with plain white cake (if they can do it!) since that is what you and your fiance seem to love. You can do the other tiers with a buttercream filling, fruit filling, etc. Choices are endless!

Once I tasted fillings I was hooked. We had 4 tiers, 3 tiers with filling but opted for a plain white cake as our topper. It really paled in comparison and I was disappointed we chose it after tasting all the other ones.
We aren't big filling people either so we are having 2 tiers of Chocolate Cake with cream cheese icing as the filling and 1 tier with vanilla cake with a chocolate icing as the filling. Just for a little variety.
It really depends on your cake. We chose spice cake and carrot cake and they did not go well with fillings, but tasted great with cream cheese icing. Most people love white cake anyway with icing so I dont think it'll be too simple. If you want a plain white cake but are worried that some people will want filling, see if you can do both. We are doing a carrot cake and then spice cake cupcakes because we wanted people to be able to choose. But in the end, its up to you!
Ours is Rum and it is sooooooooooooooooooooo goooooooood.

Instead of a filling with a cake, have you considered cupcakes? Ultimately, it's your wedding, do what you want.
We're doing two flavors in 3 tiers: red velvet with cream cheese in the middle and chocolate with raspberry puree and Bavarian cream between the layers.
Most shops will make recommendations as to what fillings taste best with what cake flavors. When you have your consultation ask what their most popular flavor combinations are. With the cakes I'm delivering, I've seen a rise in real fruit fillings (strawberry especially) and, believe it or not, brand-name candy and cookie fillings like Oreo, or our shop's custom creation, Milky Way. The variety provided by the bakery is often posted on their Web site, so you can get a head start.
