Live Stations at Buffet

If you had an Indian food buffet, did you have any live stations?  If so, what did you have them make live?

I probably wouldn't...  it would be for the sole purpose of entertainment, but if your schedule runs late, and all the guests are hungry, people will want to move fast and furious through the buffet line to eat....

If the schedule was okay, maybe stirfry veggies with the sizzles and the oohs and the ahhhs...

At our wedding in India we had a live jalebi station.  People liked it and they were the only jalebis I've ever liked eating (and which are much better fresh and still warm).

We could do it in India because we could hire more people, which keeps things moving.  Here it would probably be much more expensive.  The schedule there is also much more flexible, so you don't have to worry about moving on to the next part of the evening like you do here.

We have a risotto station, a mashed potato bar, and an antipasti station.  I think it's not going to be items that actually need to be cooked on the spot, just combined.
