Recipe Xchange: Seafood/Vegetarian

With Lent coming up, I was wondering if we could share some non-meat recipes.  I'm not Catholic, but DH is, so I follow suit this time of year since I'm the cook.  Plus, it's probably better for me to force myself to eat non-meat for a day.

BTW, if anyone is wondering, Lent starts on March 9th this year... I googled it this morning :)

    Unhealthy Catholic here. We usually have pizza, fish sticks, crab/fish cakes, tuna salad, egg salad.

    I am interested in other recipes though, I tried to cook flounder last Thursday and it was eh.

    I usually do shrimp, salmon, other fishes.  But by the end of Lent I'm 100% uninspired and run out of ideas!

    haha I'm christian but not catholic and DH is nothing haha But here's a good recipe for you....

    honey mustard salmon...its yummy and easy
    (you dont have to do the asparagus...most times I just make the sauce and then use a frying pan to cook the salmon)

    DH and I love salmon with Teryaki glaze mixed with a little honey.  just brush it on and reapply once or twice during cooking under the broiler.  Goes great with a side of asparagus or pasta with a little olive oil, lmon juice, and cheese on it.

    Shrimp fajitas is also a nice option, too.  It's retty easy to adjust the recipe on the back of the majita seasoning packet to work with shrimp ;)

    I make a very easy vegetarian chili that even DH loves (he is a meat lover).
    It's 2 cans of stewed tomatoes, 2 cans black beans, a can of corn and a can of kidney beans.  First sautee chopped green pepper and onion (I leave the onion out cause DH hates them) in a pot, then add all the cans including the liquid.  You also add chili powder, cayenne, and a little bit of cinnamin (I have the exact amounts at home).  Bring it to a boil then simmer for about a half hour.  top with shredded cheddar.  It's delicious.

    some easy things that come to mind for vegetarian meals are:

    -tomato soup & grilled cheese sandwiches
    -minestrone soup
    -vegetarian chili (i could look up my recipe if anyone is really interested, but it's one of those things so easy to "wing it" and everyone likes it differently - but if i remember off the top of my head i used a few different cans of beans, tomatos, tomato sauce, carrots, onions... ok i need the recipe)
    -tacos/nachos/burritos - you can use black beans, refried beans (just get the ones that are vegetarian/fat free/without lard), or soy ground meat (morningstar & boca both make it)
    -veggie burgers & sweet potato fries (or any fries, but i love sweet potatos!)
    -eggplant parmigiana
    -"breakfast for dinner"
    -pasta salad/casseroles - pasta, beans, tomatos, broccoli (whatever vegs you want really) in either italian dressing, balsamic, olive oil, tomato sauce, your choice
    -stir fry - any vegs you want or just buy a bag of the frozen mixed stir fry vegs.  tofu is pretty easy to do (just open up the pack, wrap it in a towel and let it drain as much as possible, and then slice up and throw it in the pan or marinate it in whatever sauce you want first and then throw it in the pan) or if your eating seafood use something like shrimp.
