Super Bowl Eats

So what I thought was just going to be me, H and one of his besties for our mini Super Bowl party this Sunday has now turned into cramming 10-12 peeps in my tiny condo. Super excited to have a big group of friends to cheer on our beloved BRONCOS, but desperately in need of some snack food inspiration on the cheap.

Got any great recipes that don't cost a fortune?

  • We aren't doing anything too crazy this year for the game. We are heading over to my parent's house to watch it with the rest of the family. H and I are cheering on the Broncos even though we like both teams. We are all bringing something to snack on for everyone so I'm going to make these Buffalo Chicken Egg Rolls. I got the recipe off of Pinterest. I'm not sure on the cost but I thought they looked NOMS! Here is the link:

    Sorry, I'm just a little overexcited. They're tater tot nachos (LINK). 

    Last year, we made a guacamole football stadium. It also had salsa (red for the 49ers) and bean dip (purple-ish for the Ravens). I really don't care about football (which you can tell from my terrible goldfish lineup), but I like an excuse to make ridiculous foodstuffs.

  • Not sure what we're doing yet. We were invited to a party about an hour north of us, but we're going to a surprise party for the guy who invited us the day before. If FI would like to make the trip up there twice in one weekend, I'm willing to do that too.

    We'll be rooting for the Seahawks, since FI is a long-time fan and has a bunch of family in Seattle.

    We're not sports-people, but we usually go to Super Bowl parties to hangout with friends. One of my friends made jalapenos stuffed with buffalo chicken one year...it was amazing.

  • We're going to hang out with some friends - I'm making my famous buffalo chicken dip (seriously, this stuff is the reason I get invited to parties). 

    I'll be wearing my Patriots gear, but I'll be cheering for the Broncos (because I love Peyton, and I HATE Pete Carroll).

  • No plans yet, and I'm not sure who I'm cheering for yet. Most likely whoever H puts money on:)

    We just had a dip party this weekend, and I'm pretty sure most of them were reasonably priced.  The cheapest was probably the Skyline Chili Dip (we had a handful of OH people in the house).  It's essentially a can of Skyline, a package of cream cheese, and a package of cheddar cheese.  If you're not a Skyline fan any beanless chili will do.

    I also made pulled pork, and got all of my ingredients from Costco.  9 center cut pork chops (they should be on the thick side), 1 large bottle of barbecue sauce, one large white onion, and 3/4 cup water.  Throw it in a crockpot on low for 8 hours.  I then put in in my mixer to shred.  It should feed 10 and cost me about $20.

    I'm sure I could come up with more if you need more suggestions.  @minskat30 made this amazing savory cheese dip with roasted garlic that was devoured by the group.  Maybe she'll share her recipe:)

    I buy the hot roasted chickens at the store. Marie's Blue Cheese (it's in the salad dressing part of the produce section, it's cold - and it HAS to be Marie's). Frank's Red Hot Buffalo. Shredded cheese - I usually get colby jack.

    Shred the chicken, add the whole jar of Marie's, and then Frank's to taste. Sprinkle the shredded cheese on top. Stick it in the oven just to melt the cheese on top. 

    That's it! A lot of people use cream cheese, but I don't. This is the award-winning recipe!! :)

    @suzie211 I make that Skyline Chili dip, but we just call it chili dip. I smear a block of cream cheese in a glass dish, top with a can of beanless chili and top that with a bag of shredded cheese. Pop in the oven till bubbly and voila! NOM!

    I don't know if we're doing anything for SB Sunday. Usually BFF holds the parties, but I don't know if they are this weekend. He might be on duty which would cancel that. IF he's home, we'll probably head over there and hang out. And IF we head over, I'll be making MY awesome, amazing, kicks @brisox81's dips butt (YOU LOVE ME), buffalo chicken dip.  Oh hell...even if we end up at home on our couch, I'll still be making it and then fighting el Senor for it.

  • Happy to share the recipe.  I tweaked it a little from a recipe online.  First you roast your garlic by taking 1 head of Garlic and cut off the top 1/4 to 1/3 of it to expose the cloves, pour olive oil over the garlic as well as some kosher salt and pepper and let it roast for 40-45 minutes in a 400 degree oven (it should be soft to the touch at the end).

    While that is cooking you can make the dip base which consists of: 1-2 cups Jarlsberg (I used a lot of cheese but I love cheese), 1/2 cup Mayo, 1/4 cup Greek Yogurt, 4 oz. Cream Cheese, 1 Shallot diced, 1/2 cup Green Onion chopped, salt and pepper (and some paprika or other spices if you like it...chives are great here, cayenne would be great if you want some heat).

    Once the garlic is cooled, take the head of garlic and squeeze out the cloves (mash up the ones that aren't already mashed from your squeezing with a fork).  Fold your mashed garlic in to the dip base and you are done.

    Kettle chips.  You can serve it with veggies too but the really crunchy chips taste yummy with it.  I don't know what you call a dipping agent either now that you mention it.  :)
  • Probably Buffalo Chicken Dip if I go over to FI's house.  Usually I end up watching it alone at my house (it's a school night) and FI's power goes out so I call him and tease him that I have power and can still watch the Super Bowl and I don't even like sports. 

    Confession:  I watch the super bowl just to see the Budweiser horse commercial.  I love those damn horses!!!

  • My good friend is having a Super Bowl party that I'm super excited to go to and of course everyone will be cheering on the Broncos!

    I'm super disappointed in one of BF's friends who refuses to cheer on the Broncos. She is a 49ers fan (fine, whatever), she should hate the Seahawks and not really care too much about the Broncos in general. But apparently it makes her feel cool to hate the Broncos. I had no problem telling her we wouldn't be watching the Super Bowl with her when she assumed BF and I would.

    As for fun food - I made wings last weekend that were really good and simple. It's a slow cooker recipe and you definitely don't need the extra sauce they tell you to make!

  • Not sure if we are going anywhere for superbowl. Our friends who host usually had a baby last month. So we'll probably just be at home. Not sure who to root for. Homemade hummus is good and very cheap to make and buy some pita chips. Veggies are a good options too. Or a big crock pot of chili too.

  • We're going to FI friend's house for Super Bowl. FI is a HUGE Bronco fans, I could give a shit since the Pats aren't playing. My parents bought FI a smoker for Christmas so we're going to smoke some ribs and I'll make ST taco dip since I can't eat anything unhealthy right now!

    I vote for buffalo chicken dip (CLICK) and taco dip (CLICK) both from Skinnytaste because they are delicious and you can't tell that they're "light" versions. 

    Also, bacon Rotel cups (CLICK) are so, so good and have been a huge hit when I've made them.

  • I realllly want to make this dip, but I'm afraid I'll eat the whole thing:

    Kahlua Dip

    1 block cream cheese (kind of softened, leave it out for an hour or so)
    1 cup sour cream
    1 cup cool whip
    3/4 cup brown sugar
    1/3 cup kahlua

    Whip with an electric mixer until smooth. Refrigerate for at least an hour.
    Serve with strawberries and bananas.

  • Ohhhh, @buddysmom80 & her Kahlua Dip reminded me of the cannoli dip I made for NYE. 

    2 cups ricotta cheese
    8 oz cream cheese (softened)
    1 1/2 cups confectioners sugar
    1 tsp (or more) of vanilla
    1 cup mini chocolate chips (plus more for garnish on top)

    Serve with Nilla wafers and/or chocolate graham crackers.

  • A potato bar would be fun, @livleighton!

    I have no Super Bowl plans yet, but I'm probably going to be cheering for the Seahawks. My BFF and BF's coworker are both huge fans and I'll probably be watching with one of them. Plus I really don't have an invested interest in either team, might as well cheer for the team the people around me are cheering for.

    We usually get a vegetable tray and BF and I demolish that, but I'm trying to not eat my vegetables with just ranch. Anyone got an idea for an alternative vegetable tray dip?
  • @KeptInStitches - H and I love veggies with hummus. I also like them with French Onion Dip (jar of sour cream mixed with with a packet of french onion soup mix). We have a Super Bowl Dip which is basically a queso (1 block of diced velveeta, jar of Pace Picante salsa and 1 can of Hormel beanless chili in a crockpot until melted) that I love with veggies as dippers.

  • @Swazzle I love me some Peyton too.  In a completely "wow you're an amazing quarterback" way (he looks like my cousin physically, which is definitely a turn off lol)  I hope you get to see him!  Although I figure he probably like...practices, watches tape, eats, sleeps, and watches tape all day.  He might not even sleep.  He's Peyton.  Who needs sleep?
