  • I feel like I should C & P my breakfast and lunch every day!

    B: Cheerios, Orange, English muffin, egg, cheese and Canadian bacon sandwich.

    L: Salad with dressing, 1/2 avocado, boiled egg, cheese, almonds, turkey

  • @Swazzle - what did you think of the Kalua pork?

    B:  2 eggs, 1/2 WW waffle with a little whipped butter, 1 pc. bacon, 4 strawberries, 1/2 c. black coffee

    S:  orange and 1/8 c. cashews

    L:  2 lemon pepper chicken tenders, ~1/2 c. brown rice, ~1 c. sauteed brussels; cherries

    S:  apple and some whole milk mozzarella cheese

    D:  roasted green beans and leftover Easy Mac Casserole

    WO:  Insanity M2 D1 - Fit Test and Max Circuit workout (~90 minutes total, but I'm splitting it up)
  • @CocoBellaF - I LOVED it! It was so simple and delicious and versatile. We had it over rice the other night and then yesterday and today I made it kind of into pulled pork. There is SO much leftover too, we'll be eating pork for days.

    if you like that style of pork, this soup is REALLY good.  I make it on Sunday's or Saturday's a lot.  it is very yummy and something like what H would have eaten, only with Hatch green chiles (he's from that part of NM) instead of tomatillos.  LINK

    ETA: I wonder if I could make the whole soup part (maybe half the recipe) and then add the pork that I have left from the other night. Thoughts?



  • @Swazzle - it's kind of got a tang to it, but it's wonderful!  we both love it.  I like to add a jalapeno and an anaheim pepper to it for a little different flavor and some heat.

    I have quite a few recipes that use that cut of pork.  it's so easy because it can cook while we're at church or in the crockpot.  I have a dutch oven that I use when I cook it stovetop or in the oven.  LOVE it.
