How many items for sweets tables?

Hi ladies, I'm trying to finalize budgets and I realized I'm clueless on how much to order for our sweets tables beyond the cake. We are looking at approx 400 guests. Yes it's a big wedding. We know! 

We are doing cupcakes instead of cake slices. I planned to order 600 cupcakes because I was told a good rule was 1.5 per guest.  However we are also going to have tiramisu, cannoli and banana pudding. 

Do I need to order all three of those items based on 1 serving per guest or 1.5? Can I actually go a little lighter on them since while everyone may not grab one of everything?

you need to have enough of everything for everyone and 1.5 of each item as some guest wont take any and others will take one of each and have a nibble off of each sweet

I think if you are going to have three other dessert options you are okay ordering 1 cupcake per guest (maybe a few extras).

For the other desserts I would do 1 per guest.
