dinner idea for tonight. . . . .go!

DH will be at a meeting until like 8 tonight.  Who has ideas for a healthy meal that is quick to finish up, as in I don't mind if there is prep while I am home alone for the few hours before he gets there, but I would like something that can be finalized when he is on his way from his meeting.

I need to go to the grocery store, so I am open to any ingredients really. . . . . except for coconut and shrimp (i'm allergic)

  • Depending on how you feel about Brussels sprouts this is a really yummy recipe. In fact even if you don't like Brussels sprouts you may be surprised; FSS is the worlds pickiest eater and now is excited when he sees me throw them in the shopping cart.

    I just tried this [CLICKY] chicken recipe yesterday. I have been itching to incorporate more greek yogurt in my meals and this certainly fit the bill. It was simple and delicious, just dress the chicken and into the oven. Any type of vegetable / rice would be a great side. I made a homemade rice-a-roni to go with it by adapting this [CLICKY] recipe, also very simple.

    That looks amazing.  I love Brussels sprouts.  I'm sure I could use an oil other than coconut, right?
  • I totally forgot the recipe uses coconut oil because I always use olive oil.

    Turkey feta burgers w/ basil aoli...

    • 1 pound lean ground turkey
    • 1/2 teaspoon black pepper
    • Kosher or sea salt to taste
    • 1/2 cup diced sun-dried tomatoes (if using 99% lean turkey breasts, recommend using sun-dried tomatoes packed in olive oil) ~ find it's best to chop in food processor so you don't have big chunks in the burger
    • 1/2 cup low-fat feta cheese
    garlic clove3crushed
    salt1 1/2 tspsto taste
    basil (bunch)1
    lemon juice1 Tbsp
    mayonnaise2 cups
    black pepper1 pinchto taste

    Mix in food processor...

Shrekspeare, that website is awesome!  I think i'm going to do @afox007's chicken and brussels with the spicy balsamic avocado salad http://www.eat-yourself-skinny.com/2011/07/guest-post-friday-spicy-balsamic-avocado-salad.html from the eat yourself skinny website @shrekspeare recommended.  I am so excited for dinner now!!!!

    The best part, DH is always in charge of cleaning our giant cast iron skillet.

  • Looks like we will be having the same thing for dinner tonight, this thread made me go look to see what I had to work with and its either the chicken and brussels sprouts or chicken pot pie. 

    That avocado salad sounds amazing btw!

  • Everyone in our house loves fried rice. We use brown rice and cook it earlier in the day or the night before so it can cool down/dry a bit. We use a lot of veggies and lean meats so you get the feel of junk food but with a healthier result. It also works well because if you cook up the "filling" earlier and have everything laid out, you can throw it all together very quickly.

    I learned this approach from a Chinese exchange student I lived with a few years back. Though he liked to use chopped up hotdogs, sweet potato, and any random frozen veggie he could find.

    Cook anything you want to put into it (we usually use scrambled eggs, various veggies, and leftover meat). Pour any extra liquid off into a bowl.
    Heat a little bit of sesame oil with a bit of canola oil (higher smoke point than olive oil) and add the rice in. Keep it moving so that it doesn't burn. You don't need a lot of oil- and you can use even less in a nonstick wok or skillet.
    Pour in a combination of oyster sauce, soy, and any excess liquid that you saved into the rice. It helps turn it brown and gives it a little salt/flavor. (I usually pour the juice into a mug, add a couple of tablespoons of low salt soy, a couple of tablespoons of oyster source, and top it all off with chicken stock).
    Keep cooking the rice until the liquid is absorbed and the texture feels right (you might want to add more chicken stock or soy, per taste).
    Toss the "filling" back in and mix to combine.

    Enjoy.

    I ended up making them into small meatballs instead of hamburgers with the tzatiki as a dipping sauce. Best. Meal. Ever. Thanks again for sharing!

  • I like to put a spin on spaghetti by using spaghetti squash. I slice the squash in half and bake it for about an hour. Brown up some turkey sausage and spoon into the squash. Top with tomato sauce and cheese (if you want) and bake until bubbly. FI LOVES it and I walk away feeling much lighter than if I had sat down to a big plate of pasta.

  • We just had baked chicken over salad tonight.  I brush chicken breasts with olive oil, then sprinkle with lemon pepper and bake 375F for 15 min each side.  We throw it over salad, or have it with veg and rice or similar

I also added roasted seasoned Brussels sprouts and smoked andouille chicken sausage. OMG it was to die for, even FI was raving about it! He complains when I make Brussels sprouts. Thanks for posting that link! Now I have yummy leftovers for lunch, score!

  • Well, my ideal dinner for tonight and the next couple of nights will be ice cream, may e light ice cream to keep it healthy. But Im also recovering from a thyroidectoy and my throat is really sore |P

    But seriously when I eat normally one of my favorites is the sweet potato black bean enchilada reciple from the $5 dinner website. Corn tortillas, a jar of salsa, 2-3 sweet potatoes, black beans, cheese, and enchilada sauce. So easy and delicious!
