Ok, I realize I have made this my own personal cooking board, but......

I have a big container of leftover beef spare ribs from dinner last night.  What can I make out of them?  DH is on a no/low carb kick.  I was thinking burritos but other than corn, I am having a heck of a time thinking what veggies go with leftover bbq.  Other suggestions?

 

PS, he LOVED the crispy chicken and Brussels sprouts last week!

  • A few ideas:

    You could make a vinegar-based coleslaw to go with it- it would break up the heaviness of the meat and is low fat.

    I've been known to throw leftovers of pretty much any meat into stirfry.

    It would make an awesome beef/veggie soup (if it's as cold where you are as it is here).

    Make it into a "hash" with other veggies.

  • what veggies would go best with it?  When i think bbq, i go straight to mac and cheese and baked beans. . . . not veggies, lol!

  • Yay! Glad he liked the chicken. For the leftover ribs, you could look for the low card buns they have at the store and shred up the beef for sandwiches. I also second the vote for beef/veggie soup if it's cold where you are.

  • When ever we have BBQ we have spinach salad with it.
  • So not carb free, but healthy. I like to make beef and barley soup with leftover spare ribs. Browns some carrots, turnips (whatever veggie you like), boil in beef stock all day (the meet will fall off the bone) and remove the bones. Add the barley (I use a cup for two of us) and cook until tender.

    Maybe I can do a traditional spinach salad with hardboiled egg and a viniagrette, then throw the rib meat on it!

  • I don't want hijack your thread but I have a cooking question as well and I didn't want to start another thread. I have some chicken marianading in some lemon pepper stuff that I make. The plan was to put it on salad but we are out of salad. I have some asparagus in the fridge. I don't cook asparagus pretty often. Would it be ok for me to put it in the dish with the chicken and bake it?
  • @jdluvr06- cook them separately. They both require different cooking times and overcooked asparagus is pretty sad. I'd either steam it separately or roast it in a hot oven while the chicken is resting.

  • You can also wrap the asparagus in bacon and roast it or throw it on a grill/grill pan.

  • We sometimes wrap asparagus with refrigerated crescent rolls......that is delicious.  If you choose to roast it, maybe throw a little grated parmesan on it after it comes out of the oven while it's still hot.  Yum!
  • The Parmesan sounds good. I'll have to have FI do that. I don't steam veggies very well. Lol. I bet FI would love it wrapped in bacon but we don't keep bacon in the house and we're trying to avoid going to the store. Lol. Thanks ladies!
