    D: Roasted Ratatouille Pasta (YUM!)

    E: None unless cleaning counts. Cinders ate a pen yesterday and I need to scrub the carpet some more to get the spot out.

    L- I'm not sure yet, I'm thinking I may pick up sushi from Publix.

    D- Leftover ravioli with grilled chicken, red peppers, and onions

    E- CrossFit- we are doing overhead squats today. I hate hate those! I can't do them at all.

    L:  L/O eastern spiced chicken (it was very good!) with brown rice medley, roasted sweet potatoes, topped with parsley; mango

    S:  banana + cashew butter + prednisone (hehe)

    D:  CL Honey Cashew Chicken with tons of stir fried veggies and a little L/O brown rice medley; pineapple

    WO:  maybe Insanity Recovery, just playing it by ear.

    @CocoBellaF I don't really know. I stumbled on the scene of the crime hours after it happened. There was a lot of plastic so I don't think she ate all of it or even most of it. But she probably ate some. Hopefully that indestructible lab stomach helps her out.



  • BTW, I bought some DD decaf coffee last night at Target (no caffeine while on the pred), and it is awful.  what is WRONG with you DD lovers?  I'll drink it because I spent money on it and it's all I've got that's decaf, but seriously!  YUCK!

    @CocoBellaF We normally buy our coffee from a local shop...but if we're at Target or Kroger or something and don't have any other options we like to buy Peet's Coffee. Pretty sure they have a decaf variety but normally I prefer the Major Dickason blend. Seattle's Best was also pretty good but the bag we got had apparently been abused in transport and a lot of the beans were broken.



  • I like Element coffee the best, but you have to buy it at local places.  or I'll try an artisan brand at Sprouts or WF or something... H talked me into trying the DD decaf because he'd heard DD coffee was really good.  um, nope!!

  • @peaseblossom55 it has chicken sausage in it, so yeah, it's not vegetarian. But you could probably use the Morningstar crumbles as a substitute or even sautee up some green peppers, onions and add that instead.

    Dinner: Out (I have a doctor's appointment an hour from my house)

    Thursday
    Lunch: Same as Weds

    Friday
    Lunch: Same as Weds and Thurs
    Dinner: Crockpot Roast Chicken with ST Creamy Cauliflower Puree and steamed veggies

    Saturday
    Lunch: Asparagus, Egg, Bacon Salad
    Dinner: Out with my parents



  • @Swazzle - we are have that asparagus salad from ST next week!!

    I always plan for the week ahead and get groceries on Friday evening or Saturday morning.  this week, we have:

    tonight:
    CL Honey Cashew Chicken with a ton of stir-fried veggies and some brown rice, fresh pineapple

    tomorrow:  Italian Chicken Sausage Tortellini soup (LINK, looks so good!)

    Thursday:  EDP's Smoky Pot Roast with red onions, green beans, boiled potatoes drizzled with EVOO and fresh chopped rosemary

    Friday:  out to eat with our Spanish-speaking group

    I'm still working on next week's plan, waiting for Sprout's to come out with their weekly ad to see what meat is on sale.  I do know that we are having that ST asparagus salad though...  except I think with soft-boiled eggs.  YUM!
  • @CocoBellaF - It looks so good! I was trying to figure out what to make for myself because H works late that night. I try to make things he doesn't like on those nights. That's why I'm doing the zoodles tonight (he would want real pasta) and the asparagus salad on Thursday (he doesn't like asparagus -- I LOVE IT). 



  • I meal-planned last night too and I'm going grocery shopping on my lunch break. This week we are having:

    Tonight:
    Leftovers- Cheese Ravioli with grilled chicken, red peppers, and onions with pesto sauce

    Wednesday:
    Apple Pot Roast with onions and roasted red potatoes

    Thursday:
    If we do not have leftovers from Wednesday then we will have:
    Red Sauce DiPaola over Zucchini slices

    Friday:
    If we do not have leftovers from Thursday then we will have:
    Mac&Cheddar Quinoa with Broccoli

    Saturday/Sunday:
    Dinner with my sister and on Sunday is Easter dinner with the family
  • @southernpeach89 - the cheese ravioli with grilled chicken, red peppers, onions, and pesto sounds amazing!  I am growing a TON of basil this year, so I will be doing a lot of pesto recipes!  I might need to steal this one from you.

  • We did our meal-planning on Saturday since we do grocery shopping every other Sunday. This is what we had for our meal plans:

    Breakfast M-F: asparagus quiche for me, nothing for FI. On the weekends pork roll, egg and cheese sandwiches.

    Lunch M-F: taco salad for me, chicken cordon bleu casserole for FI. On weekends hamburgers or hot dogs.

    Dinners:

    Monday: hot dogs and turkey burgers, pasta salad

    Tonight: stuffed portabello mushrooms

    Wednesday: hot dogs and turkey burgers, get pork in spiedie marinade.

    Thursday: same as Wednesday, take pork roast out

    Friday: ST pork carnitas

    Saturday & Sunday: Same as Friday. Make Greek pasta salad on Sunday

    Monday: Spiedies

    Tuesday: Spiedies

    Wednesday: Spiedies or hot dogs and turkey burgers

    Thursday: Hot dogs or burgers with pasta salad, make rice for Friday, take chicken out for Friday.

    Friday: Cheesy chicken and rice casserole in Crock pot

    Saturday: Dinner out

  • Coco, I've been so busy with work that I haven't had time to sit down and eat lunch in weeks.  This is the first accountability thread I've even opened in awhile because I have some down time today.  I've lost 8 pounds in the last month and a half from stress.

    I went grocery shopping last night for the first time in over 2 weeks. Our fridge was almost completely empty.

    My meal plan for the week:

    Tonight: I'm making Roasted Ratatouille Pasta (LINK)

    Wednesday: leftovers

    Thursday: Brown Rice Jambalaya with Shrimp, Chicken Sausage, and Bell Peppers (LINK)

    Friday: leftovers

    Saturday: Everyone is coming over to our house for dinner and lawn games. We're grilling ribs and beer brats and I'm also making crockpot mac n' cheese and a strawberry pie (LINK) for dessert. I still need to come up with some veggie sides.

    Ooh also, please suggest ideas for Easter dinner.  I have to work all weekend so DH and I aren't going to any family for dinner.  The moms and grandmothers are piiiiiissed.
  • @CocoBellaF- It was sooo good! As much as I would like to say I made the Pesto from scratch...I did not.

    I bought the jar of pesto sauce from publix but it was still awesome! H loved it! We also made balsamic roasted cherry tomatoes with this and it was a great combination.
  • @southernpeach89 & @Sakalicious - I am bringing a side of these green beans from Pioneer Woman... LINK ... they look pretty easy and really tasty!!

  • @buddysmom80 - that's pretty similar to how I make it, and I just love the color and texture of the pesto featured there.  I can't WAIT!  I'm going to plant my basil in the ground this weekend (the freeze danger is over, hurrah!) and once I get a bush there will be pesto EVERYWHERE!!!
