  • I have the same problem. Buying lunch several times a week got to be too expensive. I usually bring leftovers, salad or a sandwich or something. Sometimes I get ideas from the accountability threads on NEY, so you might want to take a look at those.

  • OK, first of all, y'all are making me hungry with all these yummy lunch options. Just wanted to say that.

    I also do salads most days. Since I started my new job, I've gone from eating breakfast and lunch at home and packing dinner to eating breakfast and lunch at work and eating dinner at home.

    (I've also lost weight because I'm not stopping at Rutter's or Sheetz at night to get a snack, so there is that.)

    I'm not a huge fan of meal prep either, but I feel better physically when I don't eat fast food a lot, and I feel better mentally when I know I'm saving money, so I just remind myself, 'This is saving me money, and making me healthier, and it's worth it.'

    I do the salads in the jar, like lynda, and I bring lots of Greek yoghurt or string cheese. I sometimes make sandwiches (DH loves sandwiches and eats them every day for lunch). I often make crock-pot recipes and then make enough for leftovers.

    One of my favourite crock-pot recipes is a Mexican-style chicken that is great to shred and put in enchiladas, so I do that often in the winter.

  • It's funny- it feels so much harder to figure out lunches than dinners. I (or occasionally FI) cooks dinner every night for the 3 of us. It's easy most of the time. Somehow, lunches that are just for me seem harder.

    I'm thinking I need to get more disciplined about prepping salads. I like them, they're easy, healthy, and affordable. Plus, it does give me an excuse for stuff I love but the boys hate- olives, the occasional artichoke heart, green beans, etc!

  • I started packing FI's lunch every day about 8 or 9 years ago. Before that, he had been going out for lunch every single day. He had no idea how much it was really costing him (he's not great with money) and couldn't figure out how he was broke at the end of the month but I wasn't. He needed a new truck around that time, but knew he couldn't afford the payments - until I suggested brown-bagging it. He was skeptical at first, but he saved enough money bringing his lunch that he was paying more than the minimum on the loan each month, traded in for a different truck and paid off the loan on the newer truck 2 years ahead of schedule AND put away money for my e-ring.

  • Wishing I'd brought my lunch today as I sit here in a food coma... went out for brunch with some work friends. Omelette with turkey, brie, arugula and roasted grapes, redskin home fries, cinnamon toast, and a bloody Mary with spicy mix and extra horseradish. If ya'll never hear from me again, I died happy.

  • I love lunch ideas. I need to try those jar salads!

    My go-to lunches:
    • Salads, especially in the summer. Nicoise with canned tuna, olives, potatoes, and green beans; Greek salad with cukes, tomatoes, olives, and feta.
    • Chicken salad with lettuce to wrap it in.
    • Pasta with pesto or tomato sauce.
    • Couscous salad with roasted veggies, pine nuts, and olives.
    • Rice with oil-packed tuna, corn, red onions.
    • Cheese and crackers.
    • Gazpacho.
    • Bean salad with tortillas and cheese or tortilla chips.
  • I usually have leftovers from dinner so I break them up and pack them for a few lunches. I usually like to bring a small amount of chips, cookies or crackers with me if I decide to have a sandwich. Not the healthiest choices but I do my best to control the amount I have every week. I like to have soda with lunch but drink lots of water throughout the day. I think I definitely need to get into the salad-in-a-jars, those sound awesome!
