Help me make a vegetarian dinner!

I'm a total meatatarian but FI and I are having his cousin and her husband over on Saturday night. Cousin is a vegetarian thus the meal will be vegetarian. I work all day Saturday so I found a recipe for crockpot vegetarian chilli that looks pretty good but I'm stumped as to what else to serve. We'll definitely have a salad but I want at least one side dish, maybe two since FI enjoys big portions. Would rice be okay to have with chilli? 

Any and all suggestions are welcome- and I'd love main dish ideas too for future use!

  • Chili and rice is great. Although I don't have sides with chili, I have a big ol' bowl piled high with rice/cornbread in the bottom, chili in the middle, and cheese on the top.

    Now I want chili but it's too hot for that. Sad day.

  • With chili and salad, I'd serve corn bread with cheese and jalepenos - can be made ahead of time. Or rolls if it needs to be easy.

  • I like to put chili or stew on top of mashed potatoes.  That might be weird, idk.

  • Homemade cornbread. Salad is great but I'd fall in love with you for homemade chili and cornbread!

    Rice, salad, cornbread are all great options and pretty easy.  I'm a vegetarian (& lactose intolerant) and it sounds really good.
