Need some honeymoon destination suggestions!

We'll be getting married at the end of September 2015, but as I'm a teacher, I think it makes the most sense to delay our honeymoon to winter break (late December/early January - I'd say we'd like our trip to be about a week). We're forgoing a formal wedding, so we're planning on putting the money we're saving there toward our honeymoon; I'm not aiming for anything extravagant, but we're not on a tight budget by any means, either (maybe looking at about $5k? I think that's about average). Below are some considerations that we're using to try to choose a location:

- We're currently planning on going to Europe in the summer of 2015 (Sweden and Germany for certain, but maybe some other places, i.e. Prague), so we'd like to go somewhere with a different vibe

- Weather: I'd like to not expect to have to wear a coat wherever it is I'm going; temps in at LEAST the 60s (Fahrenheit) or above would be preferable, as would a low chance of rain. Again, we'll be going in late December to early January.

- I want to go somewhere with history/culture, but I'd also like to be able to do active/adventurous things. Somewhere I can, for example, explore ancient ruins or medieval architecture or historical monuments, but also hike, bike, and/or paddle would be ideal.

- It doesn't need to be primarily English-speaking, but it does need to be somewhere I can easily get by speaking English (or limited, atrophied from years of disuse, Spanish)

- I have a severe milk allergy, so it also needs to be somewhere where it's reasonably easy to find food made without dairy and/or where I can easily communicate my dietary restrictions to others. We'll probably eat out most of the time.

- The continental US is off limits, as is Canada. For reference, we'll be traveling from Chicago.

Where would you suggest we go? I have so many places that I WANT to go that I'm feeling completely overwhelmed, and I'm not quite sure what places best fit the criteria I'm looking at for this particular trip, anyway. Any suggestions would be very appreciated!

  • Mexico will have ruins and the bigger resorts should have plenty of English speakers that will be able to help.

Costa Rica has lots of adventure and culture...

Spain and Italy might work, but the temperatures may not be high enough for you.

Puerto Rico has some history and adventure plus the benefit of not being an international trip...

  • Belize sounds like a good fit for you-English is the primary language, though closer to Guatemala you will find more people that speak Spanish and a weird form of Creole.

We stayed at the Black Rock Lodge-it's an eco-resort in the Cayo District. They did have an option for a meal plan, or you could just get your meals a la cart. It's a very small resort, and the managers are awesome. The food is really good, and they accommodated any diet issues that guests had, there were quite a few vegetarians. The smaller resorts like this one are easy to contact ahead of time and talk about your dietary needs, so you can get a feel for whether they understand what you need.

While we were there we went hiking, canoeing, horseback riding. We took tours to Tikal in Guatemala and then to Actun Tunich Miknal, which is a sacred cave. A once in a lifetime experience!

We also stayed out in Ambergris Caye. The main attraction is the reef which has the most amazing snorkeling. But other than the reef I didn't think Ambergris was all that exciting. You can take day trips from there though to ruins on the east side of the country.

I think Riviera Maya would also be a good fit for you.

  • I was also thinking Mexico, Belize, or Costa Rica.  It would be very difficult to get to Europe on a $5k budget for a week during Christmas Break...the flights alone wuld eat up half of your budget most likely.  You should assume that flights to tourist destinations will be more pricey than normal over Christmas Break.  And a lot of hotels will be both expensive and booked solid.  So definitely start researching now and book everything as soon as you can!  Flights will open up 11 months in advance, but hotels will often times accept reservations up to 24 months in advance.  it's unfortunate to have to travel during the busy season, but as a teacher you don't have much choice (my mom was a teacher too, so we always had to travel over Christmas and Summer break as kids).
  • Look at southern hemisphere - the seasons are opposite so it'd be summer there! We are doing Australia in January

Plane tickets to australia are expensive, but if you find a good deal it could be a good option

OP has about a week.  That's really too short to go to Australia.  OP, I'd look into Costa Rica.

Plus, my flights to Brisbane were around $3k, not including any intra-country flights! As much as I loved Australia, it's too much travel time and money for this situation.

  • I think all these ladies are on the right track! Central/South America will be perfect for you. There's one week tours that go to Machu Piccu and include time in Lima and Cuzco for that blend of adventure and culture. Since you are going due south- there won't be a jet lag problem either. Milk consumption is also way lower in Central/South America than it is in the US

  • Morocco would be fabulous. Or Nicaragua- culture/history in the cities and then head to the Corn Islands for some beach time.
