I'm ALONE AT LAST!!!!!!!

He's off to visit his Dad for a week!
My refrigerator is not single friendly, but I'm going to the grocery in a few hours to buy stuff that I like!  Deli salad counter is waiting for me!  I want salads, sandwich wraps, and Magnum caramel ice cream bars!  Woo-hoo!
Anybody got ideas for cooking for one?  (Cat doesn't count!)

Somebody posted a southwest chocken recipe a few weeks ago for the crockpot, and I loved it, but it makes too much for just me.  Sent it to dear daughter, though!

    I am not sure if you are a seafood fan or not, but my go-to "just me meal" is shrimp with linguine.

     

    I get about 1/4 lb of shrimp (or however much you think you'll eat) shelled and deveined. I put them on a cookie sheet and drizzle olive oil, lemon juice, and salt and pepper. Bake them in a 350 degree oven for about 8 minutes or until cooked through.

     

    While the shrimp is cooking, boil some linguine and start on the sauce. I just melt some butter in a pan and then take off the heat. Stir in some lemon juice and white wine, salt and pepper, and parsley. Throw in some pasta water. Toss the cooked pasta in the sauce and top with the shrimp. Wala!

    I LOVE those things!!

    FI works late occasionally so I will make breakfast for dinner.  I love breakfast for dinner!

  • Another yay for alone time!  I love it but I so rarely get it.  Hey - if you need help with those Magnum bars I am your girl.  Heck, I will even bring an extra box.  Enjoy your time.

    Definitely made myself a grilled cheese and tomato soup for dinner last night. So good.
  • My go to meal when I'm alone is Grilled Chicken Salad.

  • Mussels in a cream and white wine sauce. I don't use a recipe but basically cream, scallions, garlic, and a lot of white wine. Then finish the bottle of wine while cooking. Served with french bread for sopping up the juice. I could live off of this but my boys hate it.

    Otherwise, cheese and crackers or more french bread (noticing a theme here...)

    I've also been known to spend a week eating tuna noodle casserole...

    I've stopped trying to cook for one and cook with the ability to repurpose at least part of what I cooked for the next day.

    For example, last night I made portabella mushrooms baked with ground turkey, cheese, and seasonings but I made an extra cap for lunch the next day and then extra turkey filling to be repurposed into tacos, quesadillas or on top of pasta. 

    It makes the next day of cooking way quicker.
  • I have been alone for a bit now and wish my DH would come back! But, I'm sure after a few days, I'll wish for the opposite.

  • I always cook myself a fritata when I'm home alone. Although sometimes I'll sneak something bad into the house, like boxed mac and cheese. And then I eat the entire thing myself. It's shameful. 
  • When I am home alone, I slice Cheddar with Caramelized Onions cheese and eat it with Club crackers. It's my favorite indulgence.

    I'm not alone! I may also cut up hot dogs to put in said mac and cheese...

    My FI is a celiac, so whenever he leaves for a week or so I go crazy on noodles and bread and stuff. I try to eat it all before he gets back. When he is home I don't keep gluten thing in the house, because I feel bad that he doesn't get to eat it. I get my gluten fix and he doesn't have to even feel sad about what he's missing!
