Burrito Bowl assistance

Big surprise, another food question!

DH and I made pulled pork in our smoker on Monday.  10 pounds of it, for a 4 person dinner.  (DH loves Costco!)  I put some of the pork aside after it was pulled before it was sauced with BBq sauce with the hopes of making burrito bowls for dinner tonight.  I have never made them before.  I'll tell you my plan and you guys can help me with suggestions/additions/etc.  Please!

cooked white rice fluffed with a touch of lime juice

black beans

pulled pork

shredded cheese

salsa

sour cream

sliced avocado

(hot sauce on the side)

  • I would maybe add grilled onions or peppers, but otherwise that sounds delicious!

  • Corn?  One of my favorite parts of a burrito bowl at Chipotle.  Weird I know.

    I think its Green Giant? that sells a "mexi corn" in a can.  I put it in my guacamole.  It's delish.  I also like to have some chips on the side.  My new favorite is the lime flavored tositos.

  • I do something like this with leftover chicken or ground beef.  I usually do a mexican rice (pre-seasoned rice packets) or I add onions to white rice.

    Also, I take the cooked meat and throw it in a pan with lots of Mexican/Spanish seasonings (sometimes a packet, sometimes spices I have on hand like chili powder, cayenne, garlic powder, onion powder, cumin, salt, pepper) with a couple spoonfuls of water.  It really adds the extra flavor you need to take it from "rice, beans, and meat" to "Mexican rice, beans, and meat."

  • That's almost my identical Chipotle order (chicken burrito bowl with brown rice & black beans, no salsa, add cheese & sour cream w/ a side of guac). 

    And my frozen mini-pizza sudden seems quite disapointing.

    Yum.  I should make that for dinner on Friday...

    ETA:  You could easily just do pork instead of chicken

    I have to steer clear of cilantro. . . . DH hates the stuff.  With that being said, cilantro rice sounds amazing to me!
